- I was fortunate to stumble across the salmon and sturgeon nursery near the famous Heaven's Gate on O Quy Ho Pass in Sapa, Vietnam. Let's just say that I found some new and beautiful flavors that I had never tasted before in many of the salmons and sturgeons I had before. There's something in the water, probably. The headwaters that give life to these babies cannot be any fresher or cleaner. Cleanest water in Vietnam gives us some of the finest fish in the world.
