For - 5 Small Ghewars (4 Inch Diameter) 2 tbsp Ghee 2 Ice Cubes 1/2 cup + 1 tbsp / 75 g Maida 1 tsp Besan 250 ml chilled water 1 & 1/2 tsp Lime Juice Oil / Ghee or Vanaspati for frying Sugar Syrup - Make 1 taar ka syrup with Kesar & Elaichi Some Nuts & Rabri - After rubbing the ghee with flour, you can blend it in the mixie to get a smooth batter. It is a lot easier & efficient - The frying fat should be medium temperature. - Use a squeezy bottle for pouring the batter & it should fall drop by drop or in one stream. Pour it right in the centre ONLY - Use a belan to make a hole in the centre by pushing the jaali to the sides. - Once you drop the batter wait for the oil bubble to stop / reduce & then add the second round of batter - Keep doing this until the jaali is prominent. - Keep pouring the oil from the sides to the centre. - Drain the ghewar on a jaali & then I leave it on a kitchen paper for 30 mins to get rid of any excess fat - Put in chashni right before serving unless you like it soft & soggy
Add milk and curd rather than water in the batter. Let the batter rest so that it gets fermented. Fermentation is the main thing, one reason why it was traditionally prepared during monsoon time. You can put the batter in a bottle and pierce a hole in it. Then you can squeeze it directly from the hole into the pan.
