I really wanted to learn the classic french omelette. So I made one every morning until I figured it out. Chef John's video really helped me understand what I needed to look for when controlling temperature.

After seeing the original video of this a while back, I now only make my scrambled eggs this way. Same prep, I just skip the folding part. Sooooo yummy and the texture is just gorgeous!
This is magical and you, the viewer, should watch the full video and master this technique.
I make these for myself now and again. I prefer to add an extra yoke or two to mix and it's non traditional, but I add cheese. Yes, it doesn't melt all the way, but still good.

I’ve been using carbon steel for that but it seems like you get better results with a nonstick skillet. I can be bit of a purist when it comes to the experience.

Tha over cooked brown dry American omeletted you metioned is actually a French country style omelette with large curds and browned with butter. As chef Jaquez Pepin says one is not better than the other. It is just a different style.
I cook those for myself. I even put them under the broiler for a minute. I love the textural contrast.

This is ok with European and Asian eggs. But I wouldn’t risk with US eggs as they get rid of the protective coating in the processing of eggs for sale, which can lead to off eggs.

Here in Southeastern Pennsylvania if you serve the average person an omelette like that their head would explode and they would send it back because they would claim the eggs are raw. They have only ever experienced the dry, overcooked omelettes that we, unfortunately, are served here in Pennsylvania. Omelettes here are always, always, always cooked on a stove that is far too hot.
How did the French do it before Teflon?

They're not raw. Not all of the egg has reached the required temperature to set which is higher than the cooked temp.
You're just used to eating overcooked eggs, which is fine if that's what you like.
Also, they finish cooking off the heat and come out perfectly done.

@@snowylilacs7952 I'm referring to a previous video where he made Spanish omelette and did it 'well done'. He mentioned there that it was his personal preference, so when I saw in this video that he does like jammy eggs it made me ask.

Just here to tell you that if you're making this and there's nothing inside of it, you're still just making scrambled eggs.
FFS, at least put some cheese in there. Other options include tomatoes, onions, ham, sausage, reindeer sausage, polish sausage, fresh spinach... or really just about anything you like.

I've had difficulty with slightly wet eggs in the past till I realized how much I love poached and soft boiled eggs. Now I try to alter my perspective a little. (I do realize damp whites are different from runny yolks.)
