I have been using my Kitchenaid mixer to make pasta dough for ages. However, I have a different technique. I measure the liquid into the bowl and add enough flour to make a thick slurry using a spatula. Then with the dough hook attached more flour is gradually added until the dough reaches the correct texture. Doesn't take long, maybe 10 to 15 minutes on low speed. As for ingredients it depends on the purpose the pasta is intended for. For Italian style pasta I use Caputo semola which is 100% durum semolina ground to a fine flour and just water alone. If the noodles are intended as a side in place of potatoes or for use in soup I use AP flour and eggs, typically 2 large eggs and enough water to make a cup. For Chinese style noodles a flour high in protein is needed to get that typical chewy texture so bread flour is used instead of AP flour. I don't use flour to keep the noodles from sticking together. Instead I use corn meal which does a better job imo.

Thank you, glad you liked it. A couple of things I didn't address. I never use the rack to dry the pasta, it's just for ease of handling. If I want to save it for later I flour it on a cookie sheet and freeze it. Have fun!

I've been making pasta by hand for 40 years & prefer it that way. Never had much luck with the Kitchen Aid but I need Bucatini for a recipe tonight and am going to give this a shot again. Hope this dough extrudes well. 🤞🏻Fingers crossed

@@pastapro2872 we most definitely have! A little sticking to the cutting side of the machine, but with time I’ll find what works for our machine. Our whole family was impressed with how great it tasted, and especially how it sits with the body Everyone ate heaps of pasta, and not a single person complained of feeling full or the feeling of overeating… again thank you for sharing the basic recipe.

The hook is for kneading the bread, not mixing the flour. After mixing the flour, kneading it with the hook attachment for 8-10 minutes will make your pasta even better, I guarantee. Should also let the kneaded bread rest for a couple hours before putting in the pasta roller.
All noodles cook at different rates. After it's been boiling for a minute or two start taking samples. Be careful. Cool your taste test under the faucet. They cook quickly.

Hi Sean, sorry about the late reply. I found it on Amazon. Pretty well made. Easier than swapping the Kitchenaid roller and cutters back and forth. Way less expensive.

If you brush the big noodle with flour, on at least one side, you'll get a good separation when it goes through the cutter. Doesn't take much.

Cook it right away. It cooks quickly. You can freeze it when freshly made and have it later.

Folding it over several times seems to give it more texture.
