- Hi! This week we tackle the very popular trend of rose gold themed chocolate drip cakes, with a bottle of prosecco, sweets, chocolates and biscuits. Pink ganache drips, white chocolate ganache covered, and a little sparkle of edible glitter.

This is literally almost the exact cake I was planning on making next week! I'm only doing 3 layers, planning on painting the drip gold and it's for a 30th bday, but otherwise very similar! I am a little nervous about it, so this video is VERY helpful and came just in time! Thank you!!

I love how drip cakes are so different each time. Thanks for the tip on how to get buttercream whiter and to get the customer to provide the alcohol. I love the topper too, looked very elegant. And you didn’t have any drip disasters with this one 🤪😉 It looks stunning. 🎂💕💕🍒

Gorgeousness, as ever, and at exactly the same time I was creating a rare 'drip' cake (I'd batted them off until now) Typically, you pulled this off with great awesomeness, mine needed your creative flare ;-) (and I totally chickened out of the white choc covering and went fondant icing!) ha ha thank you! You can always make yourself a cheeky little cake just to test out the white ganache covering! ;) A slice ever so slightly melted in the microwave for a few seconds will be heavenly...like milkybar sauce! LOL

I recently made one very similar to this with the exact same sweets & party rings, love the idea of pumping sparkle dust over the whole thing afterwards, will add that next time! As always, fab tutorial, thank you :)

Great tutorial. The cake looks amazing. Thank you for the info about getting the customer to provide the alcohol, I never new that. Fortunately I have never made a cake with any apart from using Baileys to flavour the buttercream. Does that count? If it does on this occasion it would be okay as I was providing dessert for a friend who had invited my hubby and I to dinner.

I’m going to be doing one similar but as a 8inch 4layer, could I ask would I need to use dowels for this hight of cake , I will be using a miniture bottle like yours as well, also is it best to do a Madeira sponge for sturdiness x thanks so much
Aww thanks Claire! I don't usually put dowels in for 4 layers of cake - that's my standard tier size. The cake I used was my regular vanilla sponge recipe that you can also find on the channel :D The sturdiness will come from your ganache xx

Thank you! Yes this is a hard one isn't it, as alcohol used in the ingredients itself should be ok...its an ingredient, but when its still pre-packaged in its bottle, you are essentially selling a bottle of alcohol like the corner shop would!

Thanks! Yes its super hard to capture that sparkle!! Try taking it next to a bright window and shooting a very short video instead. Facebook/Instagram and even websites now allow short videos so you can show it off better! x

Thank you! No the ganache once set actually holds it really well! Plus if it ever did sink, it would only do a teeny bit as the centre board would catch it, but I was pleasantly surprised just how well it held!
You make it look super easy Tracey!!! My last drip cake I forgot to turn heat down on microwave, my ganache was an oily mess, took ages to fix 🙄🙄
Quick question: do you price up sweeties etc before quoting cake price or just take the hit when you go mad in home bargains 🤪

Well...on this one I totally took the hit LOL. I priced for a tall 5" cake....but then when I had the bottle realised a 5" was not going to be big enough to house it on the top AND fit the topper/sweets on, so I up scaled to 7" and took the hit.

Question... i have read somewhere that a few ppl apply ganache under buttercream cakes to give the cake stability? Ever heard from that or tried it?
Yes! Totally works if you are wanting a buttercream finish on the outside. :D x
With the foam circle, is it difficult when you get ready to slice & serve the cake?
No it makes it easier as you're not having to try and cut something super tall and wobbly haha :D You cut from the top until you feel it hit that centre board so your slices are more manageable. Once the top slices are all off, just remove the centre board and continue with the one underneath :D x
Hi Tracy , I downloaded your pdf and want to say again thanks so much , just a question if you don’t mind... I normally do a 4 tier mine don’t rise as much as yours ( which I love by the way) so if I bake four Separate tins of the Vanilla cake recipe I downloaded should I be ok to do that with the bottle on top ... I love this tutorial with the hight of this cake but I’m not confident enough yet to go that high and the person who wants it won’t want it either ... so yeah just wandering will it be ok to do 4 separate layers ( not cut 2 in half) and have it basically like the one in this tutorial ... I’m sorry for being a pain but really appreciate your help... i will have to send you a photo when I do it , it’s for next week xxxx

Can I add a crumb coat of ganache and a very thin layer then buttercream on top? I’m making a cake for my sister and she loves my buttercream but will be travelling an hour with the cake thank you
You sure can! Just pop enough ganache on to hold it steady once set, and then skim over for the outer layer :D

Why do you put it on a cake drum rather than a cake card at the beginning? For more stability?☺️
Yes, I put all my cakes on drums - they are more stable for stacking, but also the depth of the drum helps to keep your scraper more upright - resulting in a higher chance of super level straight sides :D
