@@KetoUpgradeI was going to say freeze them in ice tray. I learned this from a guy that had a chicken ranch. If you beat a dozen whole eggs and gently pour them into ice tray, one cube = one egg. So maybe one ice cube could be two egg whites? Maybe. Then remove and put in bag. When you find a reason to use them just pull out how many cubes you need.
They can be used for faux mashed potatoes! I make a half batch each week and have a small serving with dinner. It's a carnivore recipe. Search for it on RUclips.

So I played around with it and found that mixing real powdered sugar with the powdered swerve or whatever, actually keeps some on the outside. Obviously the carb count increases, but like a quarter cup divided into the number of cookies, may not kill your keto if you really want the crinkle look!

The Christmas cookies of my family are spritz cookies (vanilla or almond) with using an old recipe that is predicated on a one pound container of Crisco (sigh!, soy) less 2 tablespoon set aside to grease the pans. The flour is sifted, really just sugar and egg otherwise. Its the texture of the cookie, it holds together then you put it in your mouth then one good chomp and it turns to tasty sand. Your Italian butter are a little reminiscent but those are swimming in butter (which gets resorbed) and are a stiffer cookie. Janet's (delicious keto kitchen) coconut flour spritz cookie looks good and is also tasty (using almon extract) but fluffy. Its the one recipe I'd love to get a keto version that is closer to the family cookie.
I'm not a fan of peppermint but these cookies look amazing. I think I would just stick a few white chocolate chips on top or even peanut butter chips. Sugar-free of course. Thanks for all you do. You're a great inspiration 😊

I freeze my egg whites in ziplock bags and use them later. They don’t take up tons of space in the freezer. I’m not following keto so I make a granola using stiff egg whites to carry the seasoning and maple syrup, then mix it with the oats/nuts/seeds/coconut flakes - bake in a low oven stirring periodically till crunchy. I’m sure there are many other recipes you can think of to use them up.
To get your taste buds to a place favoring less sweetness is just establishing a fasting system. Either intermittent 16-18/8-6 or do a 3 day fast every month. I did a 7 day fast in Aug and my Sweetness level went down dramatically (serious sweettooth even tho sugarfree 10 years)
I've been doing intermittent fasting for over a year pretty much 9pm-noon or 1 most days. I want to do an extended fast but with having to cook every meal and model eating family dinner to a toddler its hard to do. Plus testing recipes so I can get videos out. I will try eventually though.
@KetoUpgrade ya Doing the longer fast as a mom is nearly impossible Why I did it during summer and hubby joined me as well our last son home was in Cali visiting his Sister. It was a blessing even though tough to do.

Thanks! I use a nespresso Peppermint coffee pod and add a sugar free Mocha syrup I get for cheap at home goods or tjmax. Then low carb milk I froth in a milk frother. Aww thank you!❤️
I think id like to try your scrumptious looking lemon cookies for Christmas. Iced, of course, and with sparkly yellow "sugar" sprinkled on top. I think they'd look really festive.

They're baked in mini-muffin tins: a cream cheese crust with a small amount of caramelly butter-brown-sugar with added small-diced pecans, which fluffs-up, a little. Grandma used to sprinkle them with powdered sugar. They should keto-ize fairly well.
Egg whites! Guilt free meringue cookies-top with keto chocolate, etc, mashed "potatoes" by Chris Cooking Nashville. Im trying to avoid dairy so im using coconut cream. If you don't like coconut apparently you can add a little lemon to mask the taste.
What if you used confectioners erythritol instead of the granular? How would the recipe change? Anthony’s brand says only erythritol in the bag, so, if you went by weight, it would be the same but would the powder dry it out? 🤔 The places my brain goes… 😂
Yeah my brain can't compute the whole weight thing between granular and powdered either. I believe it should be the same. I use powdered in some of my cookie recipes where the original version called for it but in my butter cookie blog I said the granular was better but I don't remember why, lol. Sorry I don't have a good answer.
You might be able to. I don't have a cookie press so I can't test that. I would definitely chill them or freeze before baking if you want them to keep the shape. My italian butter definitely keep their shape when you freeze first.

You can freeze the egg whites in a little container in a convenient amount.
