    When I cook miso soup I always add miso only after I add all other ingredients as miso has live cultures in it. And switch off heat after I add miso

      Good idea to preserve its flavor and aroma. Thank you! I’ll cook it like that next time. As for the live cultures (probiotics), I don't expect much because it can't survive heat above 60C anyway😊

      The miso I used was okay, just nice. If you're worried it's too salty, use a little miso first and then adjust it to your taste 😊

      I bought the wok @ Spotlight Plaza Singapura and the frying pan @ Isetan. The brand is Ecolution 😊

    The ratio dashi:egg 3:1 .. the dashi liquid is prepared earlier?

      Yes. Dashi needs to be cooled a bit before mixing it with the eggs to get a smooth finish 😊
