I’ve made this so many times in the past year. The video was sent to me by a co-worker after I ate her cucumber salad and begged for the recipe. Most of my Asian friends and family don’t like the harsh bite of onion so I use less. I add julienned carrots for crunch and sweetness.
For those worried about saltiness, start with less salt, then taste the cucumbers to for flavor. Add more salt as needed. Only rinse if cucumbers are too salty. Otherwise it’s unnecessary. Rinsing can also make cucumbers a little mushier.
Make extra to store in fridge for lunch, dinner and for snacking. This recipe is a WINNER 😋😋

It’s really good. I like regular cabbage kimchi, radish kimchi and cucumber kimchi.

As a Korean, I'm pleasantly surprised that cucumber kimchi is so loved. I personally don't like it because I don't like cucumbers, but I can still see why many like it. It's such a refreshing dish with the perfect amount of spice. I'd highly recommend to anyone, as long as you don't dislike cucumbers like I do lol.

Depending your preference and personal taste, the amount of sesame seed oil used is VERY over powering for my hubby and I.
We saw in the comments to half it, and still way to over powering.
We ended up using 1 tablespoon instead and found it went nicely without overpowering. And you can keep adding slowly to adjust the taste if you find you want more .
