Most of my Asian friends and family don’t like the harsh bite of onion so I use less. I add julienned carrots for crunch and sweetness. For those worried about saltiness, start with less salt, then taste the cucumbers to for flavor. Add more salt as needed. Only rinse if cucumbers are too salty. Otherwise it’s unnecessary. Rinsing can also make cucumbers a little mushier. Make extra to store in fridge for lunch, dinner and for snacking. This recipe is a WINNER 😋😋

I’ve prepared this before. But, on my recipe, I rinsed the salt off the cucumbers after I left them in the salt for about two hours. Everything else is basically the same. It’s really good. I like regular cabbage kimchi, radish kimchi and cucumber kimchi.
As a Korean, I'm pleasantly surprised that cucumber kimchi is so loved. I personally don't like it because I don't like cucumbers, but I can still see why many like it. It's such a refreshing dish with the perfect amount of spice. I'd highly recommend to anyone, as long as you don't dislike cucumbers like I do lol.

😋😋 I can't do onion in mine. One thing I like to do is slice them kind of thin and soak them a bit in heated soy sauce, garlic and red pepper flakes. If I'm out of the flakes I'll use hot sauce. The look on my wife's face the first time she had it 😅.

My 8 year old niece and 3 year old nephew loves this dish they ask for it a lot everytime they go to the Korean grocery store they want to buy 5 containers of them ! Finally my sister in law learned to make it so when she does make it for them she makes them in big batches they will finish it in a week !!

Depending your preference and personal taste, the amount of sesame seed oil used is VERY over powering for my hubby and I. We saw in the comments to half it, and still way to over powering. We ended up using 1 tablespoon instead and found it went nicely without overpowering. And you can keep adding slowly to adjust the taste if you find you want more .
As a Korean, thanks for sharing your recipe. However, I would not call this dish 'kimchi'. I would say this is more of 'oh-yee moochim (mixed cucumber)' recipe because it has vinegar in it. 😄 Hope you're not offended by my comment.
The way you say kimchi sounds promising but when you said gochugaru makes me think of the scene in inglorious bastards when Brad Pitt is speaking Italian. "Gorlami, aree va durchi"

I live in an incredibly small town where even our Walmart refuses to sell items with correctly spelled food labels and even worse- nothing but your basic seasonings aka garlic powder. Where can I get my hands on ingredients like these?
The Traditional recipe does not call for vinegar; it fights with the sesame oil. I prefer the recipe with soy sauce and no vinegar. Also cut your cucumbers thinner
It’s actually better/healthier for you when you eat it raw, since none of the nutrients are removed through the cooking process. Totally safe to eat raw

2 tbsp garlic, 4 green onions, 1 small onion, 2 tbsp of gochugaru, 2 tsp sugar, 1/4 cup rice vinegar, 1/4 sesame oil sprinkle of sesame seeds

I add grated carrot and also a couple teaspoons of fish sauce too. Definitely rinse out the cucumber otherwise it's going to be too salty.
It's important to rinse the cucumber after the moisture is gone to get rid of the salt.
