1/2 cup raisins 1/2 cup golden raisins 1 cup hot water 3/4 cup (170 grams) unsalted butter, room temperature (1 1/2 sticks) 1 cup (200 grams) packed light brown sugar 1 large egg 1 1/2 teaspoons vanilla extract 3/4 cup (100 grams) all purpose flour 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon ground cinnamon 1/8 teaspoon fresh ground nutmeg 3 cups (270 grams) old-fashioned rolled oats DIRECTIONS Heat oven to 350 degrees F (177 degrees C). Line two baking sheets with parchment paper. Add raisins to a small bowl then cover with hot water. The hot water helps the raisins to become plump and juicy. Set the bowl aside for about 10 minutes. In a large bowl, beat the room temperature butter and sugar with a hand blender until creamy, about 2 minutes. (You can also use a stand mixer fitted with the paddle attachment). Add the egg and 1 1/2 teaspoons of vanilla extract then beat until combined, about 1 minute. In another bowl, use a whisk to combine the flour, baking soda, salt, cinnamon and nutmeg. Next, add the oats then stir until well combined. Add the oat mixture to the butter and sugar mixture in thirds, beating after each addition until incorporated. Drain the raisins then gently press down or squeeze them to remove any extra water. Stir them into the cookie batter. (Use a spatula or spoon for this, not the mixer). BAKE COOKIES Drop dough by two tablespoonfuls about 2 inches apart onto baking sheets. (You can also use a large cookie scoop for this). Then, wet the tips of your fingers with water and gently press cookies down until they are about 1/2-inch thick. If some of the cookies have no raisins showing on top, steal a few raisins from the bowl and add to the tops of the cookies (they are prettier this way). Bake cookies 10 to 15 minutes or until the edges are light golden brown, the center is still soft. Cool cookies on baking sheet for 10 minutes then move to a cooling rack and cool completely.

And it’s nighttime so leaving my house isn’t feasible. I thought about just using white sugar in place of brown sugar, but I decided if I’m gonna do this, I’m gonna do it right! Didn't expect much, but the final cookies were GREAT! Made without raisins (didn't have any, so had to add just a sprinkle of water towards the end), and without nutmeg, so used cloves, which I love. Just having the recipe and the encouragement to go for it made my evening. Some people may think what you did is minor, but the Bud was truly minor and the dessert after pizza made the whole evening perfect. Thank you!

OMG! This is the best cookie ever. HEALTHY AND YUMMY. I removed the raisins and added a pinch of salt. Was able to make 15pcs of oatmeal cookies by flattening 1/4 cup of the dough. I will make this again using cranberries. 😇😇😇

I bought all of the ingredients the night before - and was very much looking forward to trying them out (I am very new to baking!). They indeed came out very well and smelt delicious - although the part I struggled with mostly was the mixing of the butter and light brown sugar (I do not have a hand or stand mixer so creamed the butter and sugar with a wooden spoon instead) - this took a while, and it was difficult to get the mixture soft. Overall, I am pleased that I persevered and will try one every day this forthcoming week. It takes practice, and over time I will improve with them :)

One way to make sure it stays soft...even after 1 day is to add a pinch of Corn starch. I have had alot of success with this method.

I just baked these using your recipe. They are nice and fluffy, though I think I made the mistake of adding 1/2 stick extra much butter. As a result they are slightly harder but still delicious.

Just made these, I used raisins and cranberries(dried and prepared just like the raisins). This is the 1st recipe that has ever came out to the correct amount of cookies(16 is what it makes and 16 is what I got).

Vanilla extract is usually made from natural vanilla. Vanilla essence is imitation vanilla.
