  • Ah, pizza! What could be better? But what's the best way to cook them? Do you need a pizza stone or steel? That's the question..

    I appreciate the huge sacrifices you made to test this theory. The extreme danger you put yourselves in.
    Pizzas looked wonderful.

    I put my Pizza base onto a very hot steel frying pan and apply toppings, then I put it under a very hot grill, still in the pan.
    Works very well, same principle

    Please try this: Make your pizza dough by just bringing the ingredients together, then place the dough in the fridge in a container for a full 48 hours. Then make your pizzas. Slow fermented pizza dough is the secret to a perfect pizza.

      Since I made this video I do leave the dough a day to proove, but perhaps I should try longer..

    This is the science experiments that I like! :) We love our pizza stone and find that it definitely makes for a better pizza.

    Great idea for the store. Easy to make and highly functional. I guess the pizza sheet is much like a pizza stone (just much more durable) or similar to a brick oven where the bricks have a much higher residual heat carrying capability than thin steel found in most ovens so there's instant conductive heat the moment you close the door/opening. And that pizza looks divine!

      Yes, I'm sure the principal is the same. Both are good but if you have a plasma cutter, well ...!

    I love my pizza stone - the stone has the advantage that it stays hot and also absorbs some moisture.
    Never tried a steel plate though.

    👍👌👏 Oh WOW! That seems to work quite well! Two minutes less heating up any oven is a lot of energy saving in total. Congrats! Be assured of my compassion about your brave non stop munching testing period. You really sacrificed yourself for the viewers/customers safety. Therefore you both must have suffered a lot (at least on the bathroom scale afterwards). 😁😁

    I must get something like it for my tiny oven one day. At least with metal you never have to worry about it shattering Like I heard about some cheap pizza stones.

    some bricks in bottom oven (take care / thin steel)
    longer to preheat, but keep pizza hot 1 hour

    We used a very similar principle when I worked at Pizza Express, haha! Only our ones had sides too, for classic crust (kinda like a shallow cake tin), or it was like a wire rack for our romana/super thin crust. We could cook a pizza from fresh in like... 4 minutes?! Granted, the oven was like 300 celsius! Both types were thick in the parts that were metal though, and the rims were extra thick for a crispy edge. The wire rack actually had the effect of making it very crispy but also flexible, which was cool!

      @@WayOutWestx2 Yeah, they were professional pizza ovens. Roasting hot temperature. I think they came from Sweden... ah, yeah, they were by Sveba Dahlen. The Max Temperature I think was 350, but some of their models go to 500! Lol!

      @@WayOutWestx2 I think you could get a few ideas by looking at pictures of Pizza Express kitchens. Search 'Pizza Express Oven', 'Pizza Express Pass', 'Pizza Express Kitchen', etc into Google Images. :) A few good, real photos come up and you can spy some of the stuff used to cook with.

    I wonder, how those compare to a pizza stone. Just curious, because pizza stones are all I ever see advertised for that purpose. And I wonder why, if steel works just as well. I mean, pizza stones can shatter and also start smelling, if they absorb oil or other fluids. We had that happen to ours and it took forever, for the stone to stop giving off a burned smell, when heated.
    So it's not, like they don't have disadvantages.

    There's no reason to put cornmeal on the steel before loading the pizza. It just makes a mess and forms a barrier between the dough and steel.

    I see the laser cutter is back working well! Do you still have your outdoor earth oven that you all made? The pizzas would taste fabulous in that oven too and using your special pizza paddle (though you might have to extend the handle I 'm guessing). Those wonderful pizza's look delicious! I'll have a supreme please - hold the anchovies 🤣🍕

    In want to buy a 40 X 35 steel piece and make my own bread baking steel, my question is does it have to be a particular type of steel in order for it to be safe baking bread straight on it? .
    Any help and advice would be greatly appreciated.
    I should mention I am in the UK

    Hi Tim, how difficult was it to mount the router on the xtreme cnc table?

      I needed to get a different z-axis, and make suitable brackets to fit my particular router, but it wasn't difficult. Just check with Rob that the z motor you get is compatible.
      Getting everything really rigid would be more of a challenge, but my router is small and I mostly use small milling bits, so mine is fine for what I do. If you wanted to mill thick wood with a big bit then I think you'd best add a second gantry. Is this something you're thinking about, or are you half way through?
