Beef & Seasoning -
500g (1.1lb) - Beef Mince 90% Lean
1/2 - Brown (Yellow) Onion, Grated
3 - Garlic Cloves, Grated
10g (0.3oz) - Coriander (Cilantro), Roughly Chopped
5g (0.2oz) - Flat Leaf Parsley, Roughly Chopped
1 tsp (3g) - Smoked Paprika
1 tsp (3g) - Ground Cumin
1 tsp (3g) - Ground All Spice
1/4 tsp (0.2g) - Cayenne Pepper
Salt and Pepper
Pita & Garnish -
Avocado or Sunflower Oil
3-4 - Pita Breads
Coriander, Roughly Chopped
Flat Leaf Parsley, Roughly Chopped
Spiced Yogurt Dip -
1 Cup (250g) - Natural Greek Yogurt
½ - Cucumber, Grated and Squeezed
5g (0.2oz) - Coriander (Cilantro), Chopped
1 tsp (3g) - Smoked Paprika
1 tsp (3g) - Turmeric
½ tsp (1.5g) - Ground Cumin
½ tsp (1.5g) - Cayenne Pepper
½ - Lemon, Zest & Juice

You can flatten the stuffed chubs (the pita bread) with an empty wine bottle. The meat will go into every nook and cranny this way. I also recommend putting them into a contact grill after oiling - throwing them around in a pan usually messes them up a bit because the chubs tends to be a little fragile for the load it is carrying.

Hey Jack you've got some cracking recipes and meal ideas and i watch the channel quite often, oh and by the way i intend to buy the book soon. With this recipe and others why would we bother advocating the use of Avocado oil ?. I mean "Hell" we have 10% beef fat already inside the pitta. So lets fry it in healthy Avocado oil. No please don't because there are south American countries struggling to survive because of the trend of the use of Avocado. It may well make some jobs but these jobs are controlled by massive corporations and they are only there to rape land and use so much water that most local farmers in chile have next door to no water for themselves let alone their crops and cattle. Sounds like coca cola all over again to me.
