I like the jelly style cranberry sauce (yes, I'm one of "those people"), so I omit the orange & vanilla, blend the cranberries after cooking then adding the sugar. No thickener needed and it tastes just like the canned stuff! I've already made a batch and tried it on the stuffing chaffle - YUM!
I agree, but I'm not sure it would have the full flavor and tartness of the cranberries that come with blending (I also sieve the mixture to remove the dregs). Must be a lot of pectin in the berries because it sets up really firm.

I made this recipe recently because I saw some cranberries at the supermarket and bought a bag on a whim. I have never tasted fresh cranberries before and they looked so red and beautiful. I tasted one and wondered what was I going to do with a whole bag of tart berries. Yes, I came across your recipe and made it. Thank you so much. I did not have powdered sweetener so I boiled the granulated swerve in the water to dissolve it. Worked out fine. No crystallization after chilling in fridge.

I have made cranberry sauce for many years and now do it with swerve. But I always throw a cinnamon stick in during the whole cooking process and then when I store it in the fridge until it’s ready I just leave the cinnamon stick in and it has a wonderful dimension of flavour
I'll have remember that for next time. I always throw a cinnamon stick into a big pot of chili when I'm making it. No one can ever identify it, but they love it.

I'd try dredging cheese sticks or curd chunks in an egg wash and a seasoned 'flour' based on Protein Podwer. Thanks! we like “bubble and squeak” with all our left over thanksgiving dinner, so this is what we needed with the rest- combine all leftovers, including bits of turkey, dressing, cranberry, any “potatoe”(cauliflower), green bean or broccoli whatever, and roll into a ball, pan “fry” to reheat, top with gravy- and it is good- bet that would work in the waffle maker.

I don’t feel in the least bit restricted and actually am perfectly on point with the keto lifestyle! I made them last year (I use less sweetener though and no vanilla, sometimes orange) and now make them all year round. I really satisfies that urge for tart fruit when you need it, a little goes a long way. Go buy a couple of big bags while they are out and freeze them..costco has a monster bag at a great price right now. Safeway sells their brand frozen year round but it is a lot more expensive than the bags you can get right now (like the bag used in the video) They really freeze well and you can even cook up some and put it in the freezer for that time well...when berries just dont cut it! Thanks for recipe. I will give the vanilla a go next time.
I do this with lemon zest and a touch of lemon juice, no vanilla or orange, for pork or poultry. I do the vanilla when I want it for dessert topping or filling. It's great for muffins, cookies, cakes... anything...and you don't need much to do the trick. Thanks for another great video! Happy Thanksgiving!

I can't wait to try it when it gets cold. Where I live it is impossible to buy a sugar free jelly to put on my keto bread with a small amount of peanut butter on it for my breakfast so I am going to try this sauce on it. Made this cranberry sauce for thanksgiving and it came out to good. My daughter was looking forward to keto sides this year as she just started keto. And she lives the cranberry sauce as well. Loved the cinnamon hint So good. Turkey 🦃 and cranberry sauce and turnip was so good this year 🤗 thank you 🙏
Nice. =). I like my cranberry sauce a little more like a finely grained chutney, so I add some more savory ingredients and run everything through the food processor to grind it before cooking. This year’s sauce: I bag of cranberries 1/2C whole kumquats 1/2 small onion 1/2C water 1/2C lakanto golden 1/2tsp cinnamon 2TBS avocado oil 1tsp salt The kumquats, onion and water go in the nutribullet to make sure the kumquat seeds get pulverized, then the cranberries get a rough chop, followed by everything going in a pot to cook until I like the consistency. Add additional water as needed while cooking so it doesn’t get too dry. I don’t usually have to add anything to thicken it. Next time I’ll caramelize the onions in the oil, add a little more cinnamon, sweetener and salt, and swap the water for chicken stock to boost the umami factor. And maybe add a pinch of cloves. =) (I was in a hurry this time around to get it ready for a work potluck. )

There's probably an ingredient from the world of Modernist Cuisine that could do that, but you'll have to give me some time to work on it as I have a pretty big backlog of recipe requests.
If you don't have xanthan gum don't worry. Cranberries have plenty of pectin and acid to create the gel needed. In my opinion xantham gum would just make it taste gummier.
It depends on the quantity that you use. The 1/4 tsp I used left the consistence very jam like. I wouldn't categorize it as gummy at all. That said, some people go overboard with xanthan gum. Once you get to 4% by weight, things get slimy.

All of the pizza crusts in that book are great (and obviously not keto). Antimo Caputo '00' flour makes for an amazing crust. I've yet to encounter any keto type flour that could make a crust like that, sadly.

I did go to Wholesome Yum and she has some amazing content but the ads are so prolific they freeze up my device! I made this last weekend and it was just so good but I noticed it crystallized in the fridge. What did I do wrong? I THOUGHT I followed the recipe just like you did it, but I obviously did something weird/wrong. The flavor is amazing but I couldn’t get past the crystallization. However all was not lost, I heated what was left and blended it in with HWC and a squirt of mio acai berry and it was SOOOOO GOOOD!! But still, any thoughts what caused the crystallization?
Likely erythritol. I'm to the point that I only use that in baking, as it appears to be the one sweetener that can give crispiness to a cookie. I use allulose when I'm looking to caramelize something and BochaSweet as my general sweetener.
Hi Steve, I have a challenge for you and this may be a big ask as it’s very much a British request. I’m a Christmas nut and I’m a complete keto convert. The thing I am most worried about missing is Mince Pies. These are a sweet tart, sorry if I’m stating the obvious to you; I can tell you are a foodie. The tart casing would probably be easy enough but the filling is the challenge......do you accept! 🤓👍
I wished I watched this the first time doing keto cranberry sauce,I failed big time when I used erythritol and when chilled the erythritol it’s all clumped up.
I've been waiting for this recipe. It isnt Thanksgiving without cranberry sauce.... Powdered serve tends to be overly sweet for me. What would you suggest to make it less sweet and more tart? I also cant wait to pair this with an earthy/minerality based Washington syrah.....
When you make your chaffle turkey sandwich try adding all the things you mentioned, plus a little pesto. Starbucks used to sell a sandwich with turkey, dried cranberries, cream cheese and pesto, and it was wonderful. 😋

I'm going to use allulose, it's not powdered but it dissolves like sugar, it's not as sweet as sugar.

All of the pizza crusts in that book are great (and obviously not keto). Antimo Caputo '00' flour makes for an amazing crust. I've yet to encounter any keto type flour that could make a crust like that, sadly.

I did go to Wholesome Yum and she has some amazing content but the ads are so prolific they freeze up my device! I made this last weekend and it was just so good but I noticed it crystallized in the fridge. What did I do wrong? I THOUGHT I followed the recipe just like you did it, but I obviously did something weird/wrong. The flavor is amazing but I couldn’t get past the crystallization. However all was not lost, I heated what was left and blended it in with HWC and a squirt of mio acai berry and it was SOOOOO GOOOD!! But still, any thoughts what caused the crystallization?
Likely erythritol. I'm to the point that I only use that in baking, as it appears to be the one sweetener that can give crispiness to a cookie. I use allulose when I'm looking to caramelize something and BochaSweet as my general sweetener.
And I agree about all the ads. That’s why I don’t do that on my website.
Hi Steve, I have a challenge for you and this may be a big ask as it’s very much a British request. I’m a Christmas nut and I’m a complete keto convert. The thing I am most worried about missing is Mince Pies. These are a sweet tart, sorry if I’m stating the obvious to you; I can tell you are a foodie. The tart casing would probably be easy enough but the filling is the challenge......do you accept! 🤓👍
Is there a single ingredient in a mince pie that's even remotely keto? I don't think it's possible. Sorry.

I wished I watched this the first time doing keto cranberry sauce,I failed big time when I used erythritol and when chilled the erythritol it’s all clumped up.
Can we use frozen cranberries?

I've been waiting for this recipe. It isnt Thanksgiving without cranberry sauce....
Powdered serve tends to be overly sweet for me. What would you suggest to make it less sweet and more tart?
I also cant wait to pair this with an earthy/minerality based Washington syrah.....
I'd say just use less. Maybe go with a half cup.

When you make your chaffle turkey sandwich try adding all the things you mentioned, plus a little pesto. Starbucks used to sell a sandwich with turkey, dried cranberries, cream cheese and pesto, and it was wonderful. 😋

Sugar is not good
I made this exactly as is. I love the taste while warm, but as it’s cooling I can taste the gritty texture.☹️Anyone have ideas as to what sugar substitute is best? I used the blue Lakanto powdered monk fruit/erythritol sweetener mix.
Allulose or BochaSweet
