I'm not even a vegan, but people's obsession with eating flesh is just extremely weird to me, especially when those same people often turn their noses up at dishes containing blood, testicles, and/or other animal parts.

Turns out they were doing things such as not paying POC chefs for on-screen appearances (while paying their white coworkers for them) and refusing to cover recipes that came from places like Africa. And then they were like "oh yeah we'll try to fix things lets rework those contracts" but then they decided NAH nevermind - so most of the on-screen talent with BA quit - leaving the BA channel a hollow shell of what it once was.

That brand of sambal used in Joshua recipe is sambal oelek from Indonesia. Even tho (original) Malaysian sambal belacan and Indonesian sambal terasi is pounded in mortar like sambal oelek (with modern appliance they use blender/food processor now). But sambal oelek didnt use toasted shrimp paste (belacan or terasi)
I learned from Auntie Liz that you shouldn't wash your rice in the rice cooker bowl. The rice is abrasive enough that over time you'll mess up the non stick coating.

Love to see some Malaysian/Indonesian influenced fried rice in this! Not to knock anyone else's preferences, but Indonesian fried rice made by a street vendor will always be the supreme fried rice to me. Even homemade fried rice can't compete (and 90% of restaurant fried rice can barely hold a candle, especially when they're like, twice the price smh). Indonesian and Malaysian style fried rice tends to be darker in color because of the use of sweet thick soy sauce (kecap manis as it's called here), sambal, fish sauce, sesame sauce, etc. It's pretty different to most varieties of Chinese-style fried rice which is generally more light (in terms of flavor and color), and salty (at least the kinds I've tasted). So it doesn't surprise me that David would be almost overwhelmed when he's used to more Chinese-influenced fried rice. IMO, it's definitely more of a dinner or lunch dish than a breakfast dish like Alvin's was.
To me as an Indonesian who are raised when our household haven't got a rice cooker yet, egg fried rice is left over rice from last night that you cook in the morning, with any ingredients that you have, sometimes there are eggs, sometimes we dont have any, sometimes we add left over fried chiken or just shrimp crackers, so any method, any ingredients are fine, So many times the ingredients are only rice, shallot, and eggs, and its still delicious, its fast, easy and fill your tummy in the morning 👍
Great video. One of the best things about fried rice is it's a leftover dish. I use whatever meat and vegetable leftovers I have in the fridge. Not only do you use up your leftovers but the foods come together after some of their flavors have deepened. As long as you have rice, aromatics, and shoyu (or salt in a pinch), you can add whatever protein (meat, eggs, tofu) and vegetables you have on hand.
As an American, I'm embarrassed to say, I didn't know Taiwan was a country (I'd assumed it was a district) until I started watching Taiwanese dramas. 😳 (I've since worked to learn more Asian geography, and try to learn about different cultures)

I went to Taiwan several years ago. Loved it! The island is beautiful. Went to the top of Taipei 101. Shifen Waterfall was probably the most beautifully romantic place I've ever been. The temples were literally awe inspiring. The night market was a unique experience. Orchids, my favorite flower, growing right off the sides of trees! My curly hair hated the humidity, but I would love to go back.
Meh. It depends on the recipe. A lot of his additions are very well done. And the extra effort goes a long way. But you can see here for fried rice it doesn’t work as well. So it depends on the recipe. Subscribing always to less is more isn’t always helpful when a lot of his recipes are just spectacular
His “but cheaper” series does a good job of keeping things more simple but honestly I think some of his charm comes from his seemingly mainstream recipes going WAAAAYYY overboard in every way

I dont think its fair to say that he should change. It just isnt what youre interested in, and thats okay, watch someone else. A lot of youtube cooking and especially baking channels start off with really detailed recipes with good technique lessons, and then devolves to putting m&ms on a store bought cake. I get that there an appeal to easy, but i dont need a tutorial to put bacon on a grilled cheese. I dont need a recipe for fride rice or gnocci though. Easy recipes belong on channels like tasty and so yummy imo. Real chefs and real people should be sharing their skills, techniques, and unique recipe/flavors. Again, imo.
Joshua's recipes truly are exorbitant. Haha. I usually pick up a few techniques from him instead of copying his recipes 1 for 1. Like from his fried rice video, I've learned to make the fried rice sauce with laoganma and fermented shrip paste. The fried shallots have also been my new favorite addition to a lot of dishes I make. Great video btw.
I actually do Joshua’s recipes but when he uses ingredients that I have to buy online or something crazy expensive is when I don’t do his recipes, he never disappoints I love him
I was a fan of the Uncle Roger character until I looked into his controversy earlier this year where he took down a video where he collabed with someone who is a vocal opponent of the CPC. Nigel took the video down and apologized for "incorrect opinions" of the CPC to his wechat audience. He was funny but I just can't ignore the fact that he made that statement given all of the human rights abuses against the uyghur people.
Do not think many are willing to step so low as trying out the Oliver version. Although would been fun for a genuine good cook to try that authentic Oliver version. Authentic as in doing the exact bs that oliver did. The same mistakes in the same ways etc... Just to figure out how bad it tasted.
A bit disappointing that you didn't try Rie's easier fried rice from A.T.E. I made it once with leftover rice and shallots, and it was the best lunch I had that week.

Surprisingly, I tend to recreate Joshua's recipes more than any other RUclips chef. I just figure that if I'm going to be following a recipe and making something new, might as well be as extra as possible LOL. Never regretted a second of it!
If you ever come to Malaysia (where uncle roger is from), I need to show you what his fried rice tastes like with ‘wok hei’ or wok breath. Uncle Rogers fried rice is a very good example of classic fried rice. Good wok hei can only come from high temperatures that no conventional stove can reach, leaving your rice in individual pieces, somewhat charred on the outside but so soft and moist on the inside. That charred smell is iconic, and you will always be able to tell if your chefs fried rice is good by that particular smell. Joshua’s recipes are good but always do require more effort, but they’re also worth it IMO.
Fried rice is by far my favorite dish ever, and it isn’t just for the flavor. Fried rice is such a stable in most Asians countries and there are so many different variations, it’s just a dish everyone had their own spin on. Most dishes like curry, pho, etc are stabled to a specific country or region where as fried rice is something everyone can do. I respect when people call it Asian inspired and not Chinese rice, as there are so many versions that you can’t name it to one country unless you are respecting that culture and the way they cook it. As long as people respect that basics(simply don’t do what Kay or Jamie olive oil do) you are good. I’m hoping to do one soon and win the uncle title, but mine amid a bit more complex like the one from Josh. Also what helped uncle roger too was his rice. Having a seasoned rice.

The Amazon page said the wok is cast iron, so I don't see why he would need to avoid metal utensils. The one he was using is the exact one you typically use in a wok, both that it's metal and its specific shape.
Correct me if I'm wrong but I think Apex had 3 recipes right? One was the fancy one with over the top Stove and wok, he even trained how to work the wok etc Other was the simple fried rice he cooked in the pan. And last one last was his personalized one, the one with chips and chicken. I think I found Alex's recipe (the simple one) easier to follow. I don't have a wok and definitely don't have most of the things Joshua used.
If you want better wok hay, (smokey flavor and charred bits) while cooking the fried rice use a blowtorch while tossing it. I got this tip from Kenji when he made his own fried rice in his channel. It makes it taste really really good. Also, sorry for my bad english.

Because I dislike egg, my Mom would make fried rice without, press into a bowl and plate. She would then make an omelette that she placed over the bowl shaped rice mountain for my brother and herself. Everyone’s happy!
I had hoped that for fried rice, he'd try out a recipe by Souped Up Recipes. She shares authentic Chinese recipes on her channel and explains all the steps very well (with explanations as to why the steps are important). She doesn't use MSG in her recipes, but instead uses ingredients that have natural MSG. After Uncel Roger became so infamous over fried rice, she actually got questions about it which she addressed in in her Yangzhou fried rice video, so I would recommend watching that first. (It would actually be cool if he tried recreating that recipe. Some of the ingredients are very expensive, but considering he's spend hundreds of dollars on cheese already, I assume he can get the money back from ad revenue (or at least I hope so)… 😬)
I make egg fried rice by mixing cold rice with salt, msg and a drop of dark soy sauce in a bowl first, then i fry it and i add the egg after the rice has already started cooking. The egg only takes seconds to cook, you don't need to add it before the rice
I watched his series. He went to an authentic Michelin star Chinese chef to learn some techniques. But what I like is that he kept true to what a lot of people are saying about fried rice: make it your own.
I love joshuas rice i switch out the duckfat for oil and the 2 fancy soy sauces for one regular one but for the rest i make that stuff all the time (also with storebought fried unions tho)
fried rice is great lol it’s what we do with any left over ingredients. So it’s kind of funny to see actual recipes. Fried rice is flexible, I kinda just see whatever is in the fridge and toss it in. My secret weapon, XO sauce or lao gan ma at the very end and sprinkle with white pepper to finish.

Fried rice is just really, really, a menu that you cook when you just have a lot of leftovers and have no idea how to recycle them. That's how easy and versatile it is. I've repeatedly added maybe some weird toppings in my anything-level-1-fried-rice, and it still tastes good. You can never go wrong with fried rice, I think more so for Asians. Here in Indonesia, most, if not all, people basically grow up eating them. SAMBAL! Yes!
I know it's not fries rice, but it still slaps. An omelet with 6 eggs, a ts fancy mustard, spring onion, paprika, pickled red onion and salt&pepper. Cook 2 dl whole wheat couscous. Finish the omelet and mix in the couscous. It's real good, like damn much recommend 👌
The Alvin's version is literally my mom's, we have like a ton of Taiwanese Sausage for making this almost every morning, didn't use so much sauces (only soy sauce), we also use sugar, and didn't use garlic (bcs my mom hate the smell 🤣) it is not as tasty if we use bunch of sauces and garlic, but it's the fastest and the easiest and it definetly taste like home for me
I'm half Indo (subculture of people who are Dutch-Indonesian), and Josh's struck me as more of an Indonesian Nasi Goreng than your standard Chinese-American restaurant fried rice.

Yeah, friggin Spain has its own version of fried rice. There's centuries-old versions on every continent at this point. Fried rice is for everyone.

Surprisingly, I tend to recreate Joshua's recipes more than any other RUclips chef. I just figure that if I'm going to be following a recipe and making something new, might as well be as extra as possible LOL. Never regretted a second of it!

If you ever come to Malaysia (where uncle roger is from), I need to show you what his fried rice tastes like with ‘wok hei’ or wok breath. Uncle Rogers fried rice is a very good example of classic fried rice. Good wok hei can only come from high temperatures that no conventional stove can reach, leaving your rice in individual pieces, somewhat charred on the outside but so soft and moist on the inside. That charred smell is iconic, and you will always be able to tell if your chefs fried rice is good by that particular smell. Joshua’s recipes are good but always do require more effort, but they’re also worth it IMO.
Fried rice is by far my favorite dish ever, and it isn’t just for the flavor. Fried rice is such a stable in most Asians countries and there are so many different variations, it’s just a dish everyone had their own spin on. Most dishes like curry, pho, etc are stabled to a specific country or region where as fried rice is something everyone can do. I respect when people call it Asian inspired and not Chinese rice, as there are so many versions that you can’t name it to one country unless you are respecting that culture and the way they cook it. As long as people respect that basics(simply don’t do what Kay or Jamie olive oil do) you are good. I’m hoping to do one soon and win the uncle title, but mine amid a bit more complex like the one from Josh.
Also what helped uncle roger too was his rice. Having a seasoned rice.

The Amazon page said the wok is cast iron, so I don't see why he would need to avoid metal utensils. The one he was using is the exact one you typically use in a wok, both that it's metal and its specific shape.
You should do uncle Roger vs every fried rice he roasted.
Correct me if I'm wrong but I think Apex had 3 recipes right?
One was the fancy one with over the top Stove and wok, he even trained how to work the wok etc
Other was the simple fried rice he cooked in the pan.
And last one last was his personalized one, the one with chips and chicken.
I think I found Alex's recipe (the simple one) easier to follow.
I don't have a wok and definitely don't have most of the things Joshua used.
I also made Uncle Roger's fried rice and it was absolutely perfect there was no complaints it was amazing I can see why he won

If you want better wok hay, (smokey flavor and charred bits) while cooking the fried rice use a blowtorch while tossing it. I got this tip from Kenji when he made his own fried rice in his channel. It makes it taste really really good.

Once you have your fried rice base recipe down, it’s so fun just using random leftovers or on hand meat to make it different.

Because I dislike egg, my Mom would make fried rice without, press into a bowl and plate. She would then make an omelette that she placed over the bowl shaped rice mountain for my brother and herself. Everyone’s happy!

I had hoped that for fried rice, he'd try out a recipe by Souped Up Recipes. She shares authentic Chinese recipes on her channel and explains all the steps very well (with explanations as to why the steps are important). She doesn't use MSG in her recipes, but instead uses ingredients that have natural MSG. After Uncel Roger became so infamous over fried rice, she actually got questions about it which she addressed in in her Yangzhou fried rice video, so I would recommend watching that first. (It would actually be cool if he tried recreating that recipe. Some of the ingredients are very expensive, but considering he's spend hundreds of dollars on cheese already, I assume he can get the money back from ad revenue (or at least I hope so)… 😬)
I make egg fried rice by mixing cold rice with salt, msg and a drop of dark soy sauce in a bowl first, then i fry it and i add the egg after the rice has already started cooking. The egg only takes seconds to cook, you don't need to add it before the rice

Garlic always goes first, you want the whole oil to be fragrant. Idk much about fried rice, it's just a general practice.
In term of method I would say Alex's fried rice is far more technically authentic than the rest of those brethren.
I watched his series. He went to an authentic Michelin star Chinese chef to learn some techniques. But what I like is that he kept true to what a lot of people are saying about fried rice: make it your own.

I love joshuas rice i switch out the duckfat for oil and the 2 fancy soy sauces for one regular one but for the rest i make that stuff all the time (also with storebought fried unions tho)

fried rice is great lol it’s what we do with any left over ingredients. So it’s kind of funny to see actual recipes. Fried rice is flexible, I kinda just see whatever is in the fridge and toss it in. My secret weapon, XO sauce or lao gan ma at the very end and sprinkle with white pepper to finish.

Fried rice is just really, really, a menu that you cook when you just have a lot of leftovers and have no idea how to recycle them. That's how easy and versatile it is. I've repeatedly added maybe some weird toppings in my anything-level-1-fried-rice, and it still tastes good. You can never go wrong with fried rice, I think more so for Asians. Here in Indonesia, most, if not all, people basically grow up eating them. SAMBAL! Yes!
I know it's not fries rice, but it still slaps. An omelet with 6 eggs, a ts fancy mustard, spring onion, paprika, pickled red onion and salt&pepper. Cook 2 dl whole wheat couscous. Finish the omelet and mix in the couscous. It's real good, like damn much recommend 👌
The Alvin's version is literally my mom's, we have like a ton of Taiwanese Sausage for making this almost every morning, didn't use so much sauces (only soy sauce), we also use sugar, and didn't use garlic (bcs my mom hate the smell 🤣) it is not as tasty if we use bunch of sauces and garlic, but it's the fastest and the easiest and it definetly taste like home for me

I'm half Indo (subculture of people who are Dutch-Indonesian), and Josh's struck me as more of an Indonesian Nasi Goreng than your standard Chinese-American restaurant fried rice.
Lol, I happen to weirdly have everything for Weissman's. Unique ingredients included. To be fair, I make a lot of stuff with all those things. My chilis are dried from last year's garden though. It's too early for them.
