    I like your idea of the pizza pan over the water pan.

      Thanks. Weber actually sells a cover for the water pan if you don't use a pizza pan. My 22.5" WSM has Weber's water pan cover. If you buy a pizza pan cover, be sure to measure the size of the water pan. You want a pizza pan slightly smaller in diameter so that it fits in there. I can't recall off hand what the pizza pan size is and I'm too lazy to go out to check since it is so cold outside now! :) Be sure to wrap the cover in aluminum foil so that it's easier to clean up. Just toss the aluminum foil and most of your clean up is done!

    I usually use a bag just in case it rains but that Tupperware is a great idea!!!!

      Put the hole on the bottom of the Tupperware to keep rain out and figure out where you want it to exit in relation to the connectors on the Thermometer before you drill it.

    Nice arsenal of Webers, will you be getting the pellet grill Weber's coming out with next year or are you sticking with charcoal?

      I will likely stick with my charcoal grills. I do have a Weber Spirit E310 which is of course gas.

    Thanks for the video. Did you have to refill the charcoal at any point of the cook? Sounds like the 18.5 smoker can fit 6 full racks of babybacks (i.e 12 half racks) in total!

      Thanks for checking out the video. I added a bit more charcoal just about an hour before the cook finished, but it was perhaps about a dozen briquets only. Yes you probably can do six full racks if you cut them!

    How many spatchcock chickens fit on one grate of the WSM 18.5?
    If you were to cut the chickens in half would that make a difference?

    Would you recommend the 18.5 Weber for use at a firehouse. We cook for 13 guys and girls. Does the 18.5 have enough grill space?

    so adding the pizza pan OVER the water pan kind of defeats the point of using the water to keep temperatures down and keep the meat moist ...am I not right ??

      The water in the pan is not really for keeping the meat moist. It is for temperature regulation. It helps keep the pit temperature down. You should still spritz the ribs with apple juice or even just water to keep it moist. I do this at least every 45 mins or so when cooking ribs or doing pulled pork. I just made some ribs yesterday on the 22.5” WSM and they came out great. And, I used the water in the pan with the “pizza pan” over the water. The pit temp was in the 240 degrees range for the majority of the cook. It works fine withe the pan in there.

    I have a 18 WSM is it worth upgrading to 22?

      That depends. If you need more cooking space, the answer is yes. I wanted a 22.5” so that I would not need to cut ribs down to fit a smaller smoker when I had a party. I started using a rib smoking rack that allowed me to stack ribs on their side and with that device, I could put six full slabs of ribs on the top grate alone without cutting them. If I did the same in the middle grate, I can do 12 full uncut racks of ribs in a 22.5” WSM! Can’t do that in the 18.5” smoker! Also, the smoker has higher capacity to load in more briquets so longer cook times can be done without having to reload. But you can imagine, the drawback of the 22.5” version is it also uses up more charcoal too. So, it often costs a bit more to use than the 18.5” smoker! In general, I use the 18.5” smoker a lot more than the 22.5” smoker. But if I didn’t care about cost or the hassle of lifting the heavier weight of the middle section on the 22.5” WSM, I would prefer to smoke on the 22.5” instead all the time. I seem to get a lower temperature that maintains in that lower range easier than on the 18.5”. Smoker is “low and slow” and the 22.5” achieves that better than the 18.5” for me. I work to get the 18.5” to stay in the 225 degree range whereas the 22.5” does this a lot easier. Hope this helps.

      I don’t have a rack that will fit 6 full slabs on the top grate of an 18.5” WSM. It only fits that many on the 22.5” WSM without having to cut the ribs in half. That’s why I have the 22.5”. The rack was a gift from my niece, but I recall seeing a similar one sold at Target.

      If money ain't a issue go for it. I have a 22" kettle and a 18 wsm if I could do it all over again I'd get either 26" kettle or a 22" wsm. But that could be just me 🤷🏾‍♂️

      Weber didn’t make the 22” WSM initially. The 18.5 “ was their standard. 22” for a grill is great. For the smoker it is a lot of space to heat continuously, and therefore is harder to keep a constant temp. You’ll go thru lots more charcoal.

      If you want to put a full slab on without cutting them in half, then the 18.5" might be a bit too small. I use my 22.5" WSM for full slabs of ribs. With a rib rack that I got from my niece, I am able to stand 6 full slabs of ribs vertically on the top grate and another 6 full slabs with another rack in the middle grate if I wanted to do that many! But if you really squeeze in the ribs, you could probably just make one full slab fit a 18.5" if you wanted. But it would be edge to edge if you did it.
