Black Forest Cake
Kirsh Syrup
Sugar 7 oz.
Water 7 oz.
Kirshwasser 2 oz.
• Heat sugar and water only until sugar is dissolved, add in Kirsh and chill until use.
Cherry Filling
Sugar 16 oz.
Corn Starch 3 oz.
Salt, kosher 2 tsp.
Cherry Juice 7 oz.
Cherries, Sour Black 2.5 lbs
Lemon Juice 2 tsp.
• Mix sugar, modified starch and salt together. Set Aside.
• Combine water, cherries, lemon juice into pot, bring to light boil.
• Add dry ingredients while whisking and continue to whisk and boil for two to three minutes or until starch is activated.
• Remove from heat.
• Cool to room temp, then chill until use.
Kirsh Whipped Cream
Heavy Cream 1 qt
Granulated Sugar 10 oz.
Vanilla 1 oz.
Kirshwasser 2 oz.
Gelatin powder 1 packet
Take gelatin powder and add to sugar, then add to all ingredients together in a mixer bowl. Stir to dissolve sugar slightly for 1 min, then start to whip at medium high speed until firm peak.

Hi :) The Black Forest cherry cake looks amazing👍. In Germany, however, we do something different🙊. The first layer is with cherries and the second layer is with whipped cream, only. Whether you want to use Kirschwasser or not is up to you, I prefer something less😅 The cherries on top are a must-have for us.

The first layer is with chocolate cream and cherrys. Then the next with whipped cream and the last also just with whipped cream :) And yes a real black forest cake is just with Kirschwasser. Without you can't call it a black forest cake :(
@@annamarie3936 the original has no chocolate cream or mousse. I've never seen that anywhere here in Germany.
My grandmother also made two layers of cream with cherry filling. But maybe it's a thing here in north of Germany. She also used butter cream instead of whipping cream like in the earliest written recipes. The cake layers even used to be hazelnutcake, not chocolate. I tried that too but it wasn't the same 😅

Me, but i started baking before, becuz my mom and my grandmother also baked ( and basically all my aunts), so now i can bake on my own, like make the cake batter and bake it and basically assemble the whole cake. By the way im only 12.

Nice job. As a German I had to cringe a bit at your pronunciation of "Kirschwasser" You see, the double "ss" is not spoken as a "sh" sound. So it's Kirsch (cherry), which you said correctly, but not "washer" The "wasser" (water) is pronounced "vaser" . Kind of like saying "vase" and then adding an "er". Kirch -vase-er. Not a huge deal, just thought I'd mention it. Keep the videos coming. Kindest regards from a fan.

The reason it is called black forest cake has little to do with the Kirschwasser. The cake is always decorated with whole cherries on top which looks like the traditional head dress worn by the women in the black forest region and unique to that region only.
With the cherry filling he went a bit overboard. Kirschwasser is traditionally only in the simple sirup and the cream. Instead of the simple syrup the sponge cake layers are sometimes brushed with the syrup from the cherries, mixed with a bit of Kirschwasser. Some ppl don't like it and leave out the Kirsch completely.
The cherry filling is usually made from preserved sour cherries in the fruit juice/syrup. They are cooked with starch and a hint of cinnamon to create the jam like filling.
There are variants, where the whipped cream is substituted with the typical german butter cream, which is made from pudding (light custard with milk, vanilla and starch) and butter whipped together. It is a bit firmer than whipped cream and the cake stands better. It has the nasty habit to slide to one side at a certain hight 😋 the first ever written recipe found was also with butter cream because at that time, ppl didn't have fridges to prevent the cream from going off. The version with butter cream is my favourite .

I heard once that black forest cake was first originated in Germany, and it is sooo authentic that it is actually illegal for bakeries to make it with twists on the original recipe!!! I wonder How true is that?!

another cake not sure if cup cake. guess cut top chock let cup cake put fill in middle some people put file in middle before bake cup cake. not sure works make mess. then wip cream and chock let shaves on top cup cake. put cherry two garnish.

Cakehouse: all the ingredients sound delicious and the cake itself would be perfect with my favorites: chocolate, cherries and butter cream. Only one observation: why did you make it look like the aftermath of a forest fire? Those sticks and powdered sugar ashes are excessive and unappetizing. Sorry to complain, because you are a very good chef and know what you're doing. Think about making "live branches" with chocolate leaves. It still could be 3-dimensional and lot prettier. We've subscribed and want to see what yummies are next. Take care. :0) DBB
