It amazes me watching these Nonnas make pasta, people don’t realize how much work it is to kneed the pasta dough and then roll it out, thanks to Vincenzo I make my own pasta almost every day now, I haven’t bought pasta in about 2 years, only like ditalini and others that are hard to make, the strength in these women’s arms must be incredible, they make pasta so effortlessly, my arms and wrists get tired after a while and I’m 6’ 220 pounds, I’m not a little guy, and these awesome women blow me away. che Dio vi benedica 🇮🇹🙏🏽🇮🇹
Our Nonnas have been around for a long time, and their techniques have evolved over time. They have perfected everything from making pastas to creating amazing sauces (which you should definitely try), everything they create is pure art, and they also apply a lot of love to their cooking, which makes the dish taste even better! The techniques are excellent, and we are extremely fortunate that they are able to teach us everything. You should put this knowledge to use at home and see how amazing their creations are.
@@vincenzosplate I follow you a lot, love when Nonna cooks, I follow everything to the letter, and I try to cook with love and compassion for the food I’m making, you said something once that I never forgot, cooking and eating should be an experience, I think of that when I’m cooking for people, I believe every experience should be unique. The first time I tried making pasta attempted to roll it out by hand. I’m 5’1. Suffice to say I was less than successful and bought the pasta machine the same day. It must be technique; you and I are different heights so that can’t be it (and most Nonnas are my height or smaller lol). One day I’ll get the correct tools and practice; I can ‘see’ what she’s doing but but I’m guessing the ease with which she does it is years of muscle memory. It’s lovely to hear someone else thoroughly enjoying making pasta as our family has been. While we have to use the rolling machine I still feel accomplished. My family loves to assist and eat the ravioli. My youngest (18) invites friends over and we do this together and then feast. Frankly, I think a group of teenagers actively participating in this is a testament to how powerful Nonna’s are. They can will love, family time and enjoyment of good, simple food across the Atlantic all the way to Alberta! Wishing you many years of pasta making, good food and great friends.
@@regenabaine4949 this was nice to hear Regena, I think there are a few tricks to the pasta dough, when I use 100 grams of 00-flour, I only use jumbo eggs, this makes the dough softer and easier to roll out, you have to keep it dusted though or it will stick, a large egg isn’t enough, and an extra large egg still needs a little water added. Try 100 grams of flour and a jumbo egg, trust me, you will see the difference immediately, I have to go to Whole Foods for jumbo eggs, no one else has them. ❤️

I'm reading this exchange and laughing at how it's so much like me and my wife cooking 😂 I always have everything I need ready at hand, prepped, clean as I go, so after I'm done the kitchen is as it was before I started :-) My wife on the other hand tends to leave a mess of peels and plates in a sink, also she often starts cooking then realizes we are out of something so I have to go to the store or wait for delivery 🤦🏻♂️😂 Can't complain though, she cooks way more often, does dishes and cleans most of the time, but more importantly most of the things she cooks are way better than anything I would ever hope to do :-)))

Absolutely love this! I went to Italy this past November for my honeymoon and made fresh pasta what a lovely experience. I wish I could have stayed there! I ate carbs all day and didn't gain any weight, although I was walking a ton. Italian relationships with food and quality are unmatched, they care and put love into. I really wish I could source the same high quality ingredients.

Vincenzo, what we really need is the technique for making that homemade ricotta! It has a completely different texture from any homemade acid-coagulated ricotta I've ever been able to make! 🙏🙏🙏

Haha, I understand the desire for efficiency! While making ravioli one by one can be a labor of love, you can use ravioli molds or a pasta machine attachment to speed up the process. Still, it's all about the care and precision that make Italian cuisine special. Enjoy your delicious homemade ravioli, however you choose to make them! 🇮🇹👨🍳🍽️😊

Vincenzo I have a question. Why do most of the Nonna’s that I see making pasta roll it out by hand fairly thin, then put it in the roller? Why don’t they just start it at #1 and roll it out to #5 or whatever thickness they want, seems like a lot more work rolling it by hand first. Thanks in advance. 🙏🏽

Making it by hand helps out in creating adding that texture in every bite.
