Celiac here too. Last night I had the same thought. When I get a craving for an old gluten treat, it does not go away. The desire and craving lasts for years until I finally get a gf version. I craved kolaches and a donut for 4 and a half years until a dedicated gluten free bakery them came to our farmers market.
I also want julian to make GF vegan tamales. I got to try some one time and they were sweet and unsatisfying disappointments. Make some GF vegan tamales that are not sweet and not carrot filling based. Please.
Also a celiac and I miss goldfish and cheez-its more than any other gluten filled snack.

Going vegan is so easy! I highly recommend Gaz Oakley hes a vegan chef and makes bommmbbb recipes! Also Cheap Laxy Vegan, Liv B and Pick up Limes! Theres tonnes of recipes online too! Try it for a few weeks and I promise you'll expand your food vocabulary (if you will) and you'll have foods you never thought about trying!
Not to mention your lower carbon footprint by stopping your consumption of animal products! Amidst this climate crisis, going vegan is the best thing you can do 🌱💚
