Surprise to me was how well the san mai did. Considering too that it should be easier to touch up than 3V.

The difference in edge angle makes quite a bit of difference with edge retention in these rope cutting tests, as seen on Cedric and Ada channel's testing. That being said, I'm a big fan of CPM3V.
I love 3V. It’s tough, stain resistant and holds an edge very well, even at higher edge angles.
I had both and I found I liked 2 main things in favor of the vg1. I thought it lasted about the same, super close but easier to bring back in 2 seconds and just continue on. And I much more preferred that shape over the cpm3v knife. That 3v has more of a belly. Imo. I feel like the San mai knife is my favorite and that it’s behind the other one as far as lasts by like 10-15% at the most. 5-6 passes on a ceramic rod and I’m back to 99.9 in just 5 seconds on vg1. But the 3v was just not as quick and easy.
i have never noticed that VG1 is chippy, but the VG10 is the old steel and that was chippy.
The Master Hunter is a great knife, no matter which one you get. Excellent demo.
It might benefit you to convex the 3V version since the edge is so much thicker, or at least give it a relief bevel. Probably would improve general cutting performance in the future.
I made convex on the 3v and it outdo any of my fallkkniven and barkriver. Amazing knife

are both of these Cold Steel's Taiwan or China made? does Cold Steel mark or stamp the knives from where they were made?
They do. The 3v is Taiwan and the San mai is Japanese
How do you sharpen those convexed edges ? Wet stonr?
I use a belt sander with slack belt. Check out my sharpening playlist. It’s a harbor freight one
You can do it on stones but it takes some getting used to, what I hear people recommend to get a convex is using a strop with sandpaper but I’ve never personally used that method. Also like he mentioned a sander with slack in the belt.
An old school leather strap strop with diamond compound paste works well for convex edge

When I stropped my knives they became dull. There must be something I did wrong.
Stropping should be done on a lesser angle than you sharpen. If you do a 17° side on stone, you'd use an approx. 11° to strop.
Too much angle like he said 👆🏻and too much pressure. Honestly don’t even bother unless you’re working with under 6-7 degrees. Maybe even 5. You just roll it.
