  • Hyderabadi kachi Biriyani/ Hyderabadi Biriyani recipe
    Ingredients:
    Fried onion:
    Onion-3 large ( thinly sliced)
    Oil-1/2 cup
    Marination:
    Chicken-800g
    Chilli powder-2 teaspoon
    Turmeric powder-1/2 teaspoon
    Salt-1&1/2 teaspoon ( to taste)
    Garam masala-1 teaspoon
    Lemon juice-2 tablespoon
    Curd-1 cup
    Coriander leaves- finely chopped
    Mint leaves- finely chopped
    Green chillies-2
    Oil-1/2 cup ( used for frying the onion)
    For Biriyani Rice:
    Basmati rice-1 kg (4 cups)
    Water-as required to cook the rice
    Salt-to taste ( water should be little salty)
    Oil- 1 teaspoon ( skipped the step in the video) add when the water starts boiling.
    Spices:
    Cardamom-5-6
    Bay leaves-1
    Cloves-4-5
    Cinnamon stick- a small piece
    Layering:
    Saffron mix:
    1/2 teaspoon saffron + 1/2 cup milk
    Ghee-4-6 tablespoon
    Lemon juice-2 tablespoon
    Garam masala-1/2 teaspoon
