If you look more closely, Season 5 episode 1 and 2 have different intro for Jay, Gloria, Manny and Joe. They all, especially Manny and Joe have different expressions in the 1 and 2 episode intro. From Season 5 episode 3 until Season 6 last episode they have the intro which you have included in your video
Also Gloria’s expression is different in that two-episode intro-she had more of a worried look when turned to the camera, and I thought that’s why they changed it. Also, in Gloria’s final pose shot, her hair flowed differently.
They change certain ones but not all of them. I noticed that in one of the seasons they changed Phil and Claires part with the kids but kept Joe and Glorias and Mitch and Cams

Each intro is different and episode 7 is inspired by 2000s sitcoms like Modern Family and The Office. In the intro of that episode, there is a "hidden" message that says "I know what you are doing, Wanda", meaning that somebody knows Wanda is creating that alternate reality and he or she is watching her. You should watch it, it's pretty good, I loved it.
