Text her saying she'll be receiving a legal notice in the mail in the next few days if you don't receive your money. Tell her she can either pay you the $500, or she'll have to pay for the money she owes you as well as your legal fees. She'll pay quickly.
If you ever lend enough money where if you don’t get it back you will be pretty upset I’d have them sign a contract. You can probably make one and get a lawyer to review it to make sure there’s no kinks. Save it and keep reusing it. That’s the only way you really have any power in getting the money back if people decide to ignore you.

I would say, if you really want to lend money to people in the future, get some collateral to cover the debt - if they want 500 bucks, then ask for something worth more than 500 bucks to hold onto until they pay you back - if they never pay you back, sell their stuff. Same stuff pawn shops do.
