They are gorgeous, Tammy. When we lived in Montreal, my mom used to bring six petits fours home once a month. They were so special to me! If I remember correctly, the filling in the centre was either a light lemon or a very white cream icing - like that kind of creamy filling that was in those Krispy Kream doughnuts we had. Then, the poured icing, which was not hard, but firm. I never see them except mass produced in a grocery store and those are NOT the same! Yours are just beautiful. Thanks for showing. - roc

All sorts of small cakes were named petit fours. It was my favorite part of the wedding! Someone else has a video, where he puts the mini cake on a fork and then dips it into a bowl of icing, helping along with a spoon. Which basically means, you do not throw half of your icing away, since it wastes a lot less. Or, like you, don't have to scrape it off and heat it up again.
We made petit fours in my baking and pastry class last night and we used 2 small layers of frangipane with 2 thin layers of raspberry jam then a thin layer of marzipan just on top of the cakes. Then we used the pourable white icing and decorated with chocolate filigree patterns. They're soooo sweet though.
I'm impressed by your outcome! The double-coated ones look like something from the bakery. You did a good job of piping the decorations, too. I think they are very expensive to buy. The commercially prepared pound cake you used looks. just right for the little cakes. It also reminded me of pound cake my mother bought at the grocery store in the 50s/60s - it was so delicious. The sweet brown crust was my most favorite part. I would be happy if mine turned out like yours did; good job! TFS
I'm making these for tea with my dear friend tomorrow. I swear somewhere I've seen a technique where you melt buttercream and dip cake (in that case maybe it was cake balls?) and if the cake is cold it sets up quickly. I never knew these had jam, though. YUM!
What lovely pink petits fours. Many thanks for doing this video. You have inspired me to also make some, but I will make the fondant in multi colors of yellow, pink, lavender, and mint green, and also top them off with homemade pink buttercream, green leaves.
Yum! And sooo pretty. Thanks for showing/sharing. They look more time consuming than they actually are, that is because I will use the short cuts. I just wish they were less calories than they actually are! I can't wait to make a bunch to decorate in fun summer colors!
too much frosting is landing underneath, it's a little messy. here's a tip: work with frozen or slightly frozen cake cubes. stick a skewer in the petit four then dip it into the bowl of frosting (glaze) make sure your bowl is deep enough. twist the little cake around in the glaze to coat, lift up to let the glaze drip off right back into the bowl. hold a fork in your other hand and put the skewer between 2 tines, twist the skewer off of the petit fore from below. now the petit fore is resting on the fork. now place the little cake onto your rack to let a little bit of the glaze drip. ease the cake off the fork with the skewer you're still holding in your other hand. a lot less messy and no waste.
I seen on King Arthur’s site that you can cut the corn syrup back to 2 TBSP and substitute milk if you don’t want them so shear. Love your channel! Your Minecraft cake recipe is my go to cake recipe and everyone always says “this is the best cake”. ☺️

I have been following Gretchen for years love her and as soon as you were speaking about pound cake Gretchen crossed my mind because I can taste her pound cake about now wish I had some with my coffee. I've been tackling these for my small cottage 'high tea' business for sometime, I am going to try your icing to see if it works best. My favorite to purchase for a treat are from Patachou (forgive my spelling, it's essentially 'butterfly' in French) in Toronto in which the cake is infused/soaked in various liqueurs, so I experiment with that as well ;)
I use a big bowl with my fondant in it and then put my cake drying rack over it, cakes on that, and then pour the fondant over. If you're worried about crumbs getting in the bowl, you can always strain it after.

What if you can't find clear vanilla extract.. Can you use the regular brown one?
