Wow! I have a 2000 Eddie Bauer too. Yours is super clean and very nice. I have 190K on mine. Changed the intake manifold and suspension. It's almost bullet proof and I won't sell it. I want to build it out too.
these are fun. I have a 1997 EB. The main difference from Tahoe and other 1500 series GM trucks is that there are options for lockers or lsd for the front differential (truetrac, torsen, arb, lunchbox etc). With 4" backspacing and 16x8 wheels it can fit 33" tires with no lift, no rubbing at full lock and some front bumper trimming. I have also loaded the factory roof rails to about 350lbs with lumber with no issues.
Looking forward to seeing how this turns out. I took out all seats but the drivers seat to make mine. I have 5 movies on my channel on the conversion but I would start with part 3.

I have owned 4 different 2000 Eddie Bauers and still drive one and will buy another if I can find one! It’s my favorite SUV!
