Why not cut off the inedible part and then wash it with salt, in the processing video there are many unreasonable steps. Same with the dipping sauce and helminths.
Because if you make an incision anywhere on the piece of meat and then wash it all the internal juices and like insides of the piece of meat will be washed out. You don’t want to wash out the flavor of the meat only the sand and it’s external coating, which is why you wash first then cut after.

The particular episode was about the greatest mass extinction this planet has ever suffered. Not the famous K-Pg one that wiped out the dinosaurs, but an earlier one, lesser known but so devastating it's called 'the Great Dying', as it took out over 90% of all living things across the planet, land and sea. So why am I talking about it here? Apparently 98% of all living snail species were killed off during this event. 98%! Just a little more, and this video might well have been about a completely different creature! It says something for the resilience of life itself, as well the tenacity of snail-kind, that the survivors managed to bounce back and diversify into the wonderful array of species we see, and consume, today!
Очень странный ресторан, или кафе. Уже второе видео с ними. Достаточно нежные по вкусу улитки, завалить горой острых перцев с мощными соусами, чего то я не понимаю смысла.. на месте улитки в данном случае может быть гораздо более дешёвый кальмар например.
What a superb dish! Perfect for Spring/Summer Picnics and Social gatherings, though i'd better describe it as a Sevichy more than it is a Sashimi ! I can imagine the cool, tangy after taste and the wafty Citrusy Aroma! The cleaning and carving was done very well, especially with the generously used Rock Salt and Soda water to remove slime and probably Baking soda was added as a natural tenderiser as well, however i'd have prefered some steaming as well as the texture of raw Snails might be a bit tough to chew! Thanks!
That's how we deal with most invasive species. Locust was our issue in the first year, after we learn how to cook them good, we have to import because we want to eat some more.

Torch ginger is sour taste. The taste is similar to papaya salad or Thai salad. There are both sour, salty, sweet flavors.
@sunghwajung2899 I think the sauce'd not be soaked into snail's flesh, so it might taste like water with a rubber slice like chewy texture
