Jaime Oliver makes a Beef Wellington with a thin layer of finely chopped spinach (in the form of a pancake) to take the place of the parma ham/prosciutto ham. I haven't tried it yet, but I bet it works like a charm. You just have to make sure all the water is out of the spinach so it doesn't make the puff pastry soggy.

If you don't make stabs across the top, you will lose the whole bottom of the puff pastry; due to the steam making it mushy & IT WILL fall off into your pan. As an FYI, I make Beef Wellington at least once per month.
