It's called an animation cancel. There are videos on youtube that show you how, but you basically hold block, dash, then attack just as the lightsaber lifts up to block (this is when the dash animation ends and moves into the block animation). The lightsaber lifting part might sound weird but you'll know what I mean when you're in game.
