😮😋 this looks SPECTABULOUS!!! I am cooking a 3.5lbs Waygu Pichana right now on my Napoleon Rogue 525 gas grill and smoker. I will try to finish in like 75 minutes I guess with the high heat 🔥 in the final ten minutes of the cook . . . all four burners on blast. I hace it going indirect heat in the middle with the two outside burners on all the way low since 4:30 pm. Used wet & dry Texas Mesquite wood and Costa Rican Oak to smoke for the first 30 minutes starting at 4:00 pm.. Going to check on it right now 😊 . . my temp is 255 degrees at 5:10 👍
I know, it's kind of funny they say against the grain, yet the video clearly doesn't do that. Also such a shame to cook such a lovely piece of meat on a gas grill. Otherwise a pretty good video though!
@@meltdowninteractivemedia might be unpopular opinion. But I used to buy a lot of Wagyu Picanha from MeatNBone before inflation hit. Great meat! But man. I don’t think a person should cook Wagyu Picanha on a charcoal grill. The Charcoal like cuts out the flavor of the Wagyu itself. It isn’t bad, but it dosent let the flavor of the wagyu shine. However if you cook it sous viede, that wagyu flavor dominates. You really get to taste the quality of the meat

2:30 - that is not against the grain. that is with the grain.
Looks way overcooked
You should actually cut it with the grain. Then your Final Cut before eating will be against the grain for maximum tenderness,
