- With an early Happy Mother's Day shout out to all the moms, we bring you Smoked Chicken Salad! Just like mom used to make... well almost. Chef Tom fires up the Yoder Smokers Loaded Wichita offset smoker for a BBQ twist on that classic sandwich filling.

you could dice the skin, flash fry it up and add it to the chicken salad right before eating for some textural contrast.

I like to carefully remove the skin in one piece and stick it into my convection oven and get it crispy. Then I put that on a chicken salad sandwich for a delicious added crunch.

Dude deep fry the chicken skin and crumple it up as a crunchy garnish for the salad or wrap around a steak and deep fry almost like a keto chicken fried steak.

Holy crap I thought I forgot mother's day! Had to back out and Google it.
Just wondering here: Why do you use a fire starter cube/block/thing that you have to pay for when 2 pieces of paper junk mail is all it takes to fire up one of these chimneys? That's how I light mine anyway.
It's one of the best uses for junk mail.

This was great, I’ve never realized you could pull the skin almost all the way off - but not - and thus protect the meat while smoking ! Also, what would you do with that delicious skin?
Things me and that chicken have in common:
1: no backbone
Hey get chef tom to do a product walk thru. Of the rubs, marinades and sauces your selling. What flavor notes do they have? Which are sweet? Which are savory? Which works equal as a steak rub and a brisket rub etc. What sauces have bite .... I'd watch that and order some too!

just for my edification, why not cook it without the skin? Seems you would get more smoke or would it be too much or dry it out? Looks great, and nothing like my Mom used to make.

I like how you flicked the mustard onto the chicken instead of having the knife touch the bird. If you had done that, you would have contaminated the mustard. Nice safety tip. i am definitely making my next chicken salad with jalapenos instead of pickles.

What brand is the chicken you are you using? Where do you get them? You can’t roll back the skin like that on store bought chicken. The skin is to thin.
