Using commercial equipment in the home kitchen WORKS. When meals are cooked at home, in the busy world of today, people find they are short of time and can no longer devote hours of time in the kitchen every single day preparing meals. The result is people end up sacrificing quality home cooked meals and end up ordering out, going out, or eating pre packaged junk. Commercial equipment cuts the prep time from hours to a few minutes. I initially replaced my Cuisinart with a Robot Coupe R3 ultra and was so pleased with the result I outfitted my entire kitchen with industrial restaurant equipment. Because of my job I spent most of my life eating in restaurants. Now that I am retired I can match or better the quality of any meals prepared in restaurants and no longer eat out. Everything can now be made with fresh ingredients from scratch because the equipment and the time saved make it possible.
I love it. I’ve only eaten a commercial restaurant one time for my birthday in the past two years we cook every meal breakfast lunch and dinner, including snacks and ice cream at home you would be amazed at the commercial equipment that I own since I close my restaurant.
Emoneyblue, Thanks for responding to my post. You addressed a topic that is too often overlooked with home cooking. Most people don't understand the element of time management when they cook at home. Watching a TV Celebrity Chef in a cooking contest dice an onion in 45 seconds, or a mushroom in 20 seconds, or a clove of garlic in 30 seconds, does not help a home cook. It takes a long time to develop that level of skill. Most home cooks don't have the time to spend 10 hours a day over 10 years practicing onion dicing. High quality restaurants generally have a crew of helpers and sous chefs to do their prep work. Cooking videos generally only show the head chef spooning out prepared ingredients from hotel pans and don't show the labor hours involved in filling those pans. Prepared ingredients from grocery stores like diced garlic in a jar or tomato sauce in a jar tastes like crap. A home cook can do better if they can defeat the time hurdle involved in preparing fresh ingredients. Your ROBOT COUPE R2 with the continuous feed through accessory is a huge step in the right direction. Commercial kitchen equipment is designed to be repaired if it breaks down. This means that used commercial equipment purchased for pennies on the dollar, can be repaired to new working condition. Companies that manufacture home use appliances put computers on them knowing that when the computer fails, the appliance is worthless. After a few years the companies that manufacture home kitchen appliances no longer supply the computer boards; which essentially forces the customer to purchase a new appliance. I learned this the hard way when I purchased a KitchenAid range. The computer board blew out making the entire stove virtually worthless. The new board cost 25% of the cost of a new stove. Instead of replacing the board, I threw the stove away and replaced it with a restaurant stove that does not have a computer on it. I have used the restaurant stove for more than 20 years and it works as well as when it was brand new. Your Robot Coupe R2 is a commercial food processor that uses simple basic electronic components like: Off-On switches, a motor, a motor capacitor, a thermal breaker, a safety interlock mechanism, and some wires. I currently use a 301 Ultra; which is basically an R2 with a magnetic safety interlock. I also own about ten R2s, that I bought as used broken machines and restored them. Some had electronic issues, bad bearings, one had a broken base. All of them were fairly easy to repair and the parts were available.
This is my favorite tool in my kitchen. I have that exact model and you are right. It eliminates several employees. Now I can make more food faster and more consistent!!! Excellent demo.

Well said...an investment for real. I can tell you I have a 3 car garage full of catering and restaurant supplies. When the wife gets shoes I get a new kitchen tools. Cooking has always been a passion for me. It's what makes me happy. At Christmas time its funny because my sister in law brought me a 3 Gallon electric pressure cooker and for fathers day my wife brought me a Gnocchi board and a pasta maker, ravioli cutter and a drying rack! Hi, I was wondering, since you have both, if the Dicing kits are interchangeable between the R2 and R2 Dice base units. I'm looking to save money on getting the right size dice kit for my needs and just getting a used R2 if possible. Thanks for your help!
A lot of good, practical information here. Most of what I do is baking, so I invested in a commercial geared mixer a long time ago. I have never had a problem with it. Now, on to the subject matter, which I believe is buying in quantity, and preservation through vacuum sealing. So... Do you blanch the potatoes, onions, bell peppers, and other veggies before you vacuum seal and freeze them? Or, do you seal and freeze when they are raw? I like the idea of preparing a good quantity in advance. I also like the Robot Coupes, and would be delighted if they warranted for home use. Thanks for your video, and common sense explanation of why a Robot Coupe is beneficial. :D
cnnw3929 they do sell at home model now. all my vegetables I cut them fresh I vacuum seal them fresh and I freeze them I do plant my potatoes if I'm going to make potatoes au gratin other than that I freeze them fresh. have a nice day

I use a vacuum sealer but, you could close the bag and only leave enough room for a plastic straw and remove as much as you can that way. Hope this helps??

Short of squaring your potatoes before cubing them, you'll always have bits and remnants.
if you want total uniformity have cut
