Hi, I used to be a barista, just a recommendation, instead of making the milk first, you should swap the order make the expresso coffee first then the milk. Even if you forth the milk really silky, after you leave it for a while, (like more than 10 seconds), the milk will start to condense which turns the top part of the milk into thick foam. It will be really difficult to make latter art with thick foam as well as affecting the taste. It wouldn't take too long to heat the milk after you made the coffee and before you pour it , you should gently shake the milk jar in circle, so it will stop the top part condensing.
Also almond or soy milk are harder to get textured compared to regular milk as it heats up much faster, it takes lots of practice to control the forthing properly

Lots of comments on the milk brand, but nobody is talking about letting your milk sit before pouring it. If you want better results making latte art with any milk, don’t let it sit. Pull your shot first, then steam the milk and pour immediately. If you let the milk sit on the counter the foam starts to settle at the top of the milk, making a denser froth and making it impossible to pour complex patterns.

I was kinda going for something similar to what you have now previously. But ditched the idea of having a steamer separate from the machine just because I wasn't able to find any decent quality ones. That welhome looks so well made and definitely commercial grade for steaming. I could tell the second the milk started to spin how impressive it was. I am currently using a LaPavoni after deciding to go with it over a Nuova Simonelli Oscar 2 for the fact that it had a dual boiler since I primarily make dairy inclusive drinks. I have learned to appreciate the simplicity and durability of a Manual Espresso machine. Really enjoyed watching your workflow, was nice to see a new perspective on an at home setup.

I'm sad you got rid of the La Pavoni :( but I do agree it's difficult to get a lot of grams out of it without doing a fellini.
One thing I learned when texturizing oat milk is stretch less! I only do 2-3 seconds of stretching and that's enough for latte art. Any more it becomes super thick and comes out as cappuccino foam.

my suggestion for milk is choose plant based milk that are specifically made for barista
    .
they formulate their ingredients differently compared to other, for example; they have the right amount of sugar or fat content so you could pour latte art easily.. (and dont choose unsweetened milk because sugar is very good for stabilizing the milk foam)
    .
also Oat Milk seems to be the best for latte art and taste (in my opinion).. like "Oatly" (i've only tried the barista version)
    .
For Soy, they tends to "break" when poured into the coffee. i've seen someone pour it on hot chocolate and it didn't break or form curds, they said that the acidity of the coffee made it break. but i dont really have enough experience with soy milk
    .
and for almond.. again, dont choose the unsweetened version which make it very hard to form latte art.
    .
all of this is just based on my experience and what people say about milk alternatives 👌
