Classic Chole Masala Ingredients: 2 cups dried chickpeas, soaked overnight and drained 2 tablespoons vegetable oil 1 large onion, finely chopped 2 tomatoes, finely chopped 2 teaspoons ginger-garlic paste 2 green chilies, finely chopped (adjust according to taste) 1 teaspoon cumin seeds 1 teaspoon coriander powder 1/2 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon red chili powder (adjust according to taste) Salt to taste Fresh cilantro leaves for garnish Instructions: Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Add ginger-garlic paste and green chilies. Sauté for another 2 minutes. Add chopped tomatoes and cook until they turn mushy. Add coriander powder, turmeric powder, red chili powder, and salt. Mix well and cook for 2-3 minutes. Add soaked chickpeas to the pot and mix until well combined with the spices. Add enough water to cover the chickpeas, about 3-4 cups. Bring to a boil, then reduce heat to low and simmer until chickpeas are tender, about 45-60 minutes. Once the chickpeas are cooked and the gravy thickens, add garam masala and mix well. Garnish with fresh cilantro leaves before serving. Serve hot with rice, roti, or naan.
