This looks wonderful. Please clarify - boil for 30 minutes, then put in the vinegar & put on medium for 20 minutes? Let it sit for 5 minutes? Then pull out the curds and let it drain for a couple of hours? Thank you!
My first time at homemade Ricotta and didn't realize before I began that I shouldn't use Ultra Pasteurized milk and heavy cream, and prepared myself for the worst. BUT it actually worked and tastes Fantastic! I filled 3 round baskets! THANK YOU Mauro and Maddalena for a great recipe!
I used ultra pasteurized cream and grade a pasteurized milk. Mine isn’t clumping just a very little bit. Is it because I didn’t heat the milk high enough? Or bc of the type of milk or cream? I’m going to try again but I’m trying to figure out what I did wrong
hello good recipe. But if you only make it with milk, salt and white vinegar, it will be a Minas cheese - artisanal from Brazil. I'm Brazilian and the recipe is great.

Good conclusion! I tried it first w/lightly pasteurized milk and had good results. Next time with high pasteurized and not so good. Third time same as first and not good results. But I think I missed the boat with the proportion of salt/sugar. I am going for fresh whole milk and fresh whole heavy cream for the fourth round! It is a science project after all!
