I've been watching this movie for over 34 years, and have always wondered how the water made it past the cavern with the lava in it and how it caught up to them so quickly....
I’ve always wondered this too. Upon watching it again, I’m guessing that Indy and friends took a long winding detour through side tunnels, but the water took a direct route through a narrow tunnel, which ended in the same spot as the detour route. I’m always willing to suspend disbelief if there is some possible explanation.

The coaster at Disneyland Paris is fairly disappointing considering what Disney had previously planned for Indy. It's very short and not very heavily themed compared to the likes of Big Thunder, Splash Mountain, Expedition Everest or the Indy ride California and Tokyo Disneysea would end up getting. When Disney was originally conceptualizing Indiana Jones attractions, the imagineers created something called Indiana Jones and the Lost Expedition. It was to be a large indoor volcanic temple complex with two intersecting Indy rides. One was the Indy ride they eventually built in California (which IS a fantastic ride but odds are they had even grander plans for it in the concept phase), the other was a heavily themed mine cart coaster based on this famous movie scene.
