I noticed you touched a bit into pvp knight build but it you're aying knight, tribute wars is the best way to make money so theres a few things id add. For the build, it is literally whst you used but tuaa shield for block chance (op in pvp) and gilded katana for good burst damage. In pvp its better to put pointa in shield bash and fortify as shield bash stuns for a long time and is basically the only way to get kills other than defensive stance.

Did a knight build once. 150 str 70vit. Used captains' hat and a frozen first'smates anchor. It was decent.
My Knight skills points: 3-2-5-1-7-5 (Optimize cooldown and power).
My Stats points : 150 STR (+10% Damage dealt); 12 + ~30-40 VIT from Vibrant Gears (Knight buff 0.5 DEF / 1 VIT and 4% Damage dealt / 100 HP bonus); ? INT; ? DEX. Shield choice : Recommend have bonus HP.

I have a frozen mushroom sword but the cascade stacks only go up to like 5-9... Is the stack amount based on the weapon or weapon lvl?
I actually don't know I never got the mushroom sword version. You could try reforging it and see if that changes anything
