    There is a german guy on youtube, called Anders schärfen, doing videos all about sharpening. He uses at least 4 grids of Leather after sharpening.
    He had a video of a Doberman a year ago and said it was the first knife he didn't have to sharpen out of the box.
    With a factory angle of 25 - 30 and a big knife like this he had it at 104 (i think) at the sharpness test.
    He said he was probably just very lucky that the guy at extrema ratio sharpening his knife must done a perfect job.

    Hello DBK; Awsome video; and awsome test (and steak should be red inside).
    S600 is a way old Böhler steel; and is basically M-2 HSS; which is used a lot for metal drills, bandsaws, reamers, milling cutters ... The reason knifemakers don't like it is the heat treatment (up to 1200°C in a vacuum ) and it's an air-hardening steel; so one screw-up; and it hardens and bends itself right there. If ER got the heat treatment dialed in nicely, and the barrel test seems to confirm that, than it should actually make a really nice steel; and be indeed a LOT tougher than N690CO. It won't be as stainless; but this steel develops a really nice dark surface patina. This still is very fine-grained, but sensitive to stress fatigue; and it doesn't bend like normal carbon steel; it just suddenly snaps. If you were to shoot it with the PCP airrifle; after a couple shots I predict you'll be shooting parts of the cutting edge off.

      With steaks like flat iron, you want it to cook through so the collagen softens. Steaks like fillet mignon or ribeye don't have much collagen in them, so they're nice and tender even raw, but cheaper (better value) cuts like flat iron all need to be cooked through--at least medium rare. You can see the white bits inside the undercooked steak that mikkie was chewing on.

    S600 is pretty much just Bohler -Uddeholm's version of old M2 with a pinch of Cobalt and Nickel added. I EDC'd an Enzo trapper in M2 for a couple years and was not impressed with the edge retention and hated how hard it was to sharpen.

    Everybody has a preference on the different sizes they would like to take and use so its good that both can do well. If your a big ogre or need some of that chopping ability mixed in with being able to survive with its great to take on the Selvans. With the Dobermann. Its good for those that like to stay lighter on the go but still want to do those big tasks in case its needed. I got all the knives I need but its good to still watch the latest knives out there.

    Great vid guys, I'm an N690 fanboy so I'm always delighted to see you test it.
    S600 "should" have excellent edge retention along with toughness - I know everyone is saying that its an old steel, but its got 1.8% Vanadium and 6.2% Tungstun in the mix....... they're not to be sneezed at.
    It has to be a geometry and heat treat issue surely??

    I can promise you after 5 min that sanding belt was done. I have same issue with 3v. I've learned after a few minutes of sharpening replace belt with fresh or you're going to be there all day lol.

    the s600 is more homogeneous and has a smaller size of carbides, so that when sharpening to a thinner breakage it will give a better result, of course it is better to use diamonds for roughing, becouse s600 have a lot of tungsten carbide, but according to knife steel nerd's tests, the s600 and n690 should have approximately equal edge resistance

    Pretty sure the course grit belt from ken onion is softer than the knife, which is why it seemed to take so long, abrasives either sharpen or they dont. Its not a matter of speed

    I’m in the process of modifying my Selvans. Sharpening choil added, polished spine, flats and cutting edge, Scotch Brite main grind. Dave Brown Kydex sheath in Vietnam tiger stripe. It’s gonna be sweet!

    S600 is pretty difficult to sharpen, it's very hard, maybe too hard. I have both, and I suggest the N690co version. sharpens easily, quickly, and you can't beat a 58 HRC in a forest. S600 is 64 HRC and almost impossible to resharpen on field. Plus, Extrema Ratio is very well experienced in working N690 Bohler, they introduced S600 with the "Satre" model which is relatively new in their line.

    that flat iron steak was done ok, but it needs to be cut a certain way! against the grain, and on a bias.
    Do it again, buy a meat thermometer :D
    But cut it diagonally against the grain, you'll be blown away :D

    As practice shows, knives with such high hardness are best sharpened with soft ceramic stones. Mechanical sharpening on a belt can damage the cutting edge and tear out the hard carbides from the steel, so the cutting edge will only have soft iron without the hard carbides. The same effect is observed when sharpening a knife with diamond stones.

      I don't think carbide tear out actually happens. All the evidence I've seen shows this to be a myth. I haven't actually seen any evidence of carbide tear out happening. Do you have any you can share? It seems all anecdotal and theoretical at this point which is far from conclusive as it's very subjective and not subject to any scrutiny.
      That said, diamond and CBN are better abrasives for harder steels for sure.
      Sintered Ceramic is ok but it has its own set of problems and it's also not harder than the carbides so if carbide tear out did happen, it could cause it too just as aluminum oxide or natural stones would. So "soft ceramic" (like what?) wouldn't help any.

      you have no idea what you’re talking about. ceramic is going to be softer than the carbides, which means it’s going to cause MORE carbide tear out. diamonds and CBN will actually SHARPEN the carbides

    I have heard hear say that N690 is like VG10. S600 they make drill bits out of. So pretty tough high speed steel is what I read.

    Have Doberman IV in N690Co version, love it for it's ugliness but to be honest did not find good use for it. Had to resharpen & reprofile it and still it lies in knife box. Like how cool it looks but in forest... nah :) Still thinking if i should invest into Selvans. Maybe there are people who use Doberman daily and could share their opinions?

      All the steels they test are carbon steels - it's just that some have more chromium than others.

    I personally think that knife is sexy af but I prefer their n690. Softer steels will always be king for heavy duty use knives

      absolutely not lol. a steel with a combo of high hardness AND high toughness will be a better hard use steel than a really tough but really soft steel, soft steels deform under use. hard steels that are also tough resist chipping AND rolling.

    S600 is pretty much M2 high speed steel. It's ok and 64hrc is nice but there are so much better steels out there. K328 which is like A8mod is a nice choice.

    I'm just glad it's just not another N690 steel. Hopefully S600 will help keep the price down, but knowing Extrema Ratio I doubt it. It would be nice to see some of these companies use a steel like S390, since it's probably the toughest steel out there and can be hardened to 70HRC (though I don't think factory companies would go that high. But god these knives are ugly as sin

      S390 on a tactical or survival knife??? What are you drinking bro? You need not only a tough steel but also one that can be field sharpened/repairable.and thats true,fir any kind if field knives. Why do the absolute downgrade and go with a super brittle and super difficult steel to maintain or fix like that?

      @@greekveteran2715 S390 NOT M390. S390 is great for survival knives it's an extremely tough steel, so you can have much thinner geometry and still be equally tough as knives with much thicker geometry. Sharpening is not an issue. As with many high hardness and high hardness carbide steel, diamond plates are your friend. So maintaining in the field is not an issue at all. Look up some videos on S390 knives and how tough that steel is.

      S390 would be a really good option for a tool since it’s extremely high wear resistant

    Hey boys. As usual, another amazing review even if it felt like i was watching "Back to the future". Seriously, i had to watch it twice but in my defence, i just woke up. Anyway, i just got my selvans 5 days ago and you and your 2011 video were the motivation behing this purchace. It's ugly af but I LOVE IT. Did you change it's angle tho? I'm thinking of regrinding it to around 25deg. Should i go for it?

    I did not have time to watch all dramatics theatre of this one. But I do not find any specs on this knife tang construction. I suspect it is not a full tang!? If that is the case, Im not considering it for survival use.
