Hey Besties! Here’s another easy, delicious and AFFORDABLE meal prep for weight loss! Meal prepping is my JAMMMM lol it keeps me accountable and on track with my health/fitness goals! I’ve included some healthy snacking tips that have helped me with mindless snacking and binging episodes; hopefully they can be useful to you all as well! As always, enjoy xx

Featured Recipes -
Egg White cups
1 pack of Jimmy Dean Turkey Sausage Links
1 red bell pepper
1 handful of fresh spinach
1 carton of liquid egg whites
Seasonings (I used salt, pepper, garlic powder, onion flakes and red pepper flakes)
Directions (Egg White cups)
Chop all of your mixins (feel free to add whatever you like, I just used what I had)
Grease a standard non-stick muffin pan with cooking spray. Divide the mixture evenly among the 12 - 18 muffin pan cups (mine made 16)
Bake at 350°F. for 20-25 minutes or until egg whites are fully cooked. Insert a toothpick in the middle of a muffin and see if it comes out clean to check.
Remove from the oven and let them cool for 10 minutes. Use a knife to pry the muffins loose, if necessary.
Dish and serve hot or freeze/refrigerate for a future quick breakfast.
Chicken Chipotle Bowl
1 1/2 lb Chicken breasts, boneless skinless
Cilantro (I used Parsley)
2 cloves Garlic or a 2 tsp garlic powder
2 tsp Lime, zest and juice
2 tbsp Honey
1/4 cup Lime juice
Seasonings (I used chili powder, salt/pepper, garlic powder, onion flakes, red pepper flakes and Trader Joe’s Citrusy Garlic seasoning)
2 tbsp Olive oil
1 cup of rice
1 can of black beans (rinsed and drained)
1 bag of frozen corn
Directions (Chicken Chipotle Bowl)
Marinade: Combine the lime juice, olive oil, and honey in a mixing cup or bowl; whisk until the honey is dissolved. Add the spices, herbs and lime zest, and whisk once more. Pour the marinade over the cleaned chicken breasts and marinate for at least 30 minutes. (I cubed my chicken but it’s not necessary)
Rice: Rinse rice thoroughly with warm water. Combine 1 cup of rice with 1 1/2 cups of water or broth, season to taste. Bring to a boil and simmer for about 15 minutes. Turn off the heat and let the pot stand, covered, for 10 minutes. Remove the lid and fluff the rice with a fork. Fluff rice with a fork and add leftover herbs, lime zest and lime juice.
Chicken: Heat a non-stick skillet over medium heat. Add marinated chicken to the pan and cook until the chicken is completely cooked and the sauce becomes sticky.
Corn and beans: Heat a non-stick skillet over medium high heat. Saute and season (to your liking; I used ground cumin, salt, pepper, garlic powder and red chili flakes) the corn and beans until warmed all the way through.

Another snack option if you like hummus, Starbucks has this protein box that has grilled chicken bites, snack size hummus, pita triangles and grapes or apples…now you know you will definitely save buying and making it yourself. If you didn’t want to do the pita, sub it for cucumbers
Yass! The protein boxes are great from Starbucks, def expensive tho! I love the idea of making snack boxes tho, definitely adding that to my list for sure 😊

Hi Sis. Baby Tip: I make the "egg muffins" often. It might help if you pour the eggs in a bowl and season prior to adding to each cup.
Hey Ri! Absolutely love your videos! I also do make the egg bites. Just a little tip if you don't mind, mix all your ingredients in a bowl (sausage, pepper and spinach), and seaonsings and mix well. Then add them to your baking tray. I find that with this way, all ingredients are evenly distributed including the spices.

I have tried meal prep and I was so overwhelmed. You made it look so easy. Also I have always read only meal prep for 3 days at a time and that was just so much for me. I don’t have time to meal prep twice a week. I loved this video. So simple and looked so delicious.
Hey girly! Meal prepping can be so overwhelming, when I first started I only prepped one meal a week. Then as I got the hang of it, I started increasing the amount of meals I prepped.
I heard that too! I used to prep every Sunday and Wednesday but I haven’t had any bad experiences with prepping for the full 5 days so I’ve just been doing that. I try to prep foods that I know hold up well in the fridge, whatever doesn’t due well, I keep it separated just in case so I don’t have to throw out the entire meal!

I love writing my meal plan down also. It helps me to stay focused and keep track of what items i need to purchase before I start cooking. I just scan my fridge and cabinets and write down whatever ingredients I’m missing.

Meal prepping isn’t that bad, I usually designate Sundays to meal prepping. When you think about it, you set aside maximum 2 to 3 hours on the weekend so you don’t have to cook at all during the week. When I first started out meal prepping I only meal prepped one meal out of the week until I got a handle on three meals.

Yessss for the healthy meal prep! This helps make it feel realistic for someone like me who is on the go and needing some ideas. I’m pescatarian so I can easily swap out the chicken for shrimp 🙌🏾

I was vegan and vegetarian before, so it’s nothing for me to enjoy any faux meat alternatives as well as fish. I would highly encourage you to continue to do your research 😊

I definitely like the idea of meal prepping but for me I don't think that I would want to eat the same thing every single day so if I meal prep I will probably meal prep for two days of the same thing and then two days of something else something like that but I've seen many meal prep ideas and most of them are the same as far as five days of the same thing so I know for me if I cook a big meal I can only eat the same thing no more than two days in a row but I definitely like the idea and I may even try the recipe that you presented cuz it looks very good thank you so much

Haha it’s SOOOOO cold! We’re expecting a huge snow storm where I’m at so I’ll be in the house also lol. Hibernation is the vibe during this weather so you’re not alone 🤍

Yasss that’s the only way to do it! I added salsa, lettuce and avocado daily and it was so good!

I like your meal prep videos If you want to clean the rice you can put the bowl with water and wait, in this way you use less unnecessary water.

I got the cookies from ShopRite but I’ve also purchased them from Wegmans, Walmart, and Target! My knife set is SUPER old, I believe it’s from IKEA tho. This one is pretty close to the one I have.
