As a parent who had a son who was anaphylactic to dairy, nuts and egg I really appreciate how made the effort to separate the allergens! Great work chef! My son grew out of his allergies but I still appreciate those that make the effort 🙏

Mr T - the par cooked pasta is okay to keep things quick but you lose a lot of flavor. Have you considered keeping a small pot of the original pasta water to add maybe a small ladle to each serving. For starch.
I noticed you don’t sauté/ sear the prawns in the pan before you add the sauce. You simmer them directly in the sauce. Is that due to time constraints?
ok I am curious , you said the food court is paying 30 pounds (36.14 dollars ) for 1 Kilo ( 2.2 lbs for all us Americans ) Those look like Thai chili peppers or very small Jalapeno's , is that the pepper or is it something different ?

Earlier before service and saved in containers. It’s usually cooked al-dente and when it’s reheated in boiling water it gets a little softer.
