Hey mate, welcome to NZ! I studied kahawai at university and have fished for them (and their relatives) here in NZ and Australia most of my life.
My personal preference is to eat them smoked, but will definitely try them as sashimi after that. I was going to rabbit on about them a bit but.. you've already got the main info from other folks.
I will say that genetically, they seem to be originally from Australia where there is more genetic variation in them and the related species. There are only 4 distinct species, but there may be one or two sub-species. The jury is still out on that.
What is known is that they (distantly) related to some of the mackerals and tunas, but the genetic signal I was looking at wasn't actually clear enough to sort out that definitively. Kahawai and the Arripidae are basically genetic orphans. They don't seem to have a lot of really close relatives.
Finally, for preference, smaller ones are MUCH better to eat but as the others have said, eat them fresh, bleed them first and enjoy them.
And enjoy your time in NZ!

I think it’s never taken off in Japan as sashimi fish due to the blood discolouration but maan it’s a awesome for a feed sashimi and cooked - just got to bleed them asap & I’d recommend chilling to firm up the flesh for best sashimi the next day.

Hey Taku, you should try using the Kahawai as burley. Here in Sydney, Australia we tie it to the rocks and let the waves mash it up as a natural source of burley for Kingfish. We usually get Kingfish coming close to shore due to the scent after 1-3 hours to check things out, that’s when we usually catch them on jigs, casting metals, white coloured large soft plastics and stickbaits and poppers. Goodluck mate!

You can catch them on the beach, rocks, wharf, boat, anywhere. Very popular to smoke, or raw fish (coconut milk, tomato, red onion etc). Great sport on light tackle and perfect for kids to have a go with too. I'm heading to a beach fishing comp this weekend in the BOP and if I catch one I'll def try your sashimi recipe! Sadly it is undermined by some for their reluctance to eat it raw. Great that your experience gives it cred for what it is. It is also amazing smoked. These fish can be caught right around NZ in the summer. You pronunciation is also very good Ka-ha-wai which in Maori means 'strong water' excellent sport on fly or light gear. Loving your content.

In the 1980's I was 10 yrs old. We went on family holidays to Robe in South Australia, a small fishing town concentrating on Crayfish soled to the Japanese Market. At the harbour entrance the water would boil with salmon schools coming into the little harbour at night. I caught a fish that was bigger than my whole body, on a child's rod that was 3ft long with 2lb line and a red tab spinner. The rod nearly broke in 2 pieces with the force of the fish fighting against me. I was surrounded by locals and other travellers fishing, all of us in awe at the size of the fish I hooked. My dad took the rod from me, trying to land the monster without a net. He put his hand in the water to lift the fish at its gills and it suddenly bit through the line.....and it was away....but it jumped out of the water, in displays of defiance for the next 30 minutes. I was gutted but that's why it's called fishing and not catching😂.

That is exactly the way I used to bait my halibut hooks. Charter captains especially, would get mad because I was using "3 baits for 1 fish". Nevertheless I usually caught MORE & bigger fish this way.
With the limit being 2 fish, and paying $350-500/trip, using $20 worth of bait should not be an issue. I am out there for meat to fill my freezer for winter!😊

So it's probably like sand trout or alotnof other bait fish. Not that it necessarily tastes bad but if you freeze it then it wil turn to mush when thawed. Those are only able to consume same day.

2:42 the way you said "we gotta get throuh these trees here" sounds exactly like a Newzealand accent. Though it was most likely not intentional

Kahawai are most places I think, I've only known them to be around the North island though, not sure about anywhere else.

i grew up catching kahawai haha it was mainly wat we caught. wasn't until recently wen i started fishing more seriously i started to get more snapper via surfcasting. but real good fun targeting those kahawai especially on light gear. spinning for them on the beach is also great fun especially around river mouths

Definitely here in Australia mate! In Western Australia they are fished for commercially to be used for cat food..I usually keep 1 or 2 for the dog but you’ve inspired me to try and taste them again 😊

Hey mate we call this particular fish Australian salmon where I'm from , which you've probably heard , but I think this fish is knocked around as just catfood... But smaller ones bled and put on ice are delicious I think , it's coming up to salmon season around my area of South west W.A and it's a great time to flick lures on light gear and have some line peel lots of fun sight casting , love the videos yew
