In the Caribbean a closely related dish is called macaroni pie (you can find a lot of recipes for it). The flour is minimal if at all and unleavened; generally the egg and dairy are enough to bind it. It is also often given a top crust of crushed crackers, spices and cheese.

I watched this after eating a tasty green salad with fresh strawberries, blue cheese, cherry tomatoes, red onion, and raspberry balsamic vinegar dressing. So I wasn't hungry. Yet watching you eat your mac&cheese cake made we want to make and eat one right away. Om nom nom.

I love anything savoury. As kids we often ate room temperature leftover mac and cheese in solid square blocks with a dash of ketchup or mayo. It was like having a pretend savoury pie.
We make an ovendish but just with milk and eggs, lots of macaroni, bacon/smoked cured pork, ham and cheese and some nutmeg. It will colour nicely and is really delicious with a tangy sauce made of mixing ketchup with mustard.
It reminds me of a casserole from years back with a twist. It was a Hamburger/Meatloaf type recipe placed in the dish then covered with Mac N Cheese. Baking cooks the meat. the meat cake is made somewhat so the Mac N Cheese.covers the edges. Nice surprise and a unique taste. You might want try this concept. With your double recipe and 2 baking pans and a cheese spread/sauce as Icing make a layered cake.
I made something like this once. A long time ago in one of those after school programs and tried it at home. The recipe included: milk, eggs, cheddar, Bisquick and uncooked elbows. I kind of dig it 😀
Looks great. Unique. We will have to try it soon but I think either we will do it served on a bed of a homemade cheese sauce or with it spooned over the top. That's just us cooking.

Easier is always better especially if you get to tweak the recipe with the type of cheese or macaroni used. I love green onions I may buy some to use in this recipe, but I have sweet onions and am thinking of using those without adding the sugar and using Ditalini macaroni that I've seen in pasta e fagioli soup.
Hey Chef John, is there anyway you could create some videos covering the topic of Make Ahead and then Freeze for Convenience meal prep ideas? I am really interested in ways to spend say an entire weekend prepping and freezing portioned proteins etc and then having a simple dinner by just grabbing parts from the freezer. I would love to see your take on this type of prep. Thanks for the amazing content otherwise.

Note about flour: Yes there is a difference between self raising flour and self rising flour. In the American Self Raising flour, salt is often added to the flour during the milling process, along with everything else that makes it self raising flour. Many other countries - such as Australia - the industrial standard (so most of the brands of flour you buy from the shops) don't add the salt.
Murica?!? In 2021, people living in the EU spent an average of 14% of their income on food. Americans spent just 10%. Where I'm at (Eastern NC), there's literally less than a penny per ounce difference between all-purpose and self-rising flours. You say "Murica" like it's a bad thing. But I'm wondering why the EU food companies are so greedy that they can't add a bit of salt to flour...... I thought American companies were greedy, but seriously, cheaping out over probaly less than a tenth of a penny per bag??? That makes American companies look like amateurs in the greed department.
I haven't tried this recipe yet but I think it might be good with cheese sauce drizzled on top if served hot or maybe some cream cheese whipped with butter and piped on like icing rosettes if serving room temp. Because more cheese always equals more better.
That looks really good! It would be something I would make to take to a family dinner or a BBQ. It would be a hit. For home, however, I always cave in and make my Mom's Mac & Cheese, which has layer upon layer of sharp yellow cheddar, diced crispy bacon, saute'd onions and green peppers. We wouldn't settle for anything else as kids and now my kids won't eat any other kind either.
Even if it’s not great you can wash it and drain it which makes it perfectly usable. I hate it when cooks try to discriminate against a product for no good reason

in england we call it a pasta bake and many variations exist
One can put the sieve used to drain the pasta on top of the cooking pasta with a pudding bowl with the butter in it to melt.

Pre-grated cheese is perfectly fine. I've never had a problem with it simply melted as a topping or when making sauces.
