Actually your metabolism plays the most important role. For some people it's really fast and others it's slow. That's why some people can eat all kinds of junk food and not gain any noticeable weight. Two different people can eat the same exact amount of food and one with high metabolism will shed the weight easily while the other person packs it on. In general it tends to get slower as we get older but some people it was never fast to begin with. And then there are gluttons who just gorge themselves but that is a different story entirely.
