    Ingredients:
    1 medium-sized bottle gourd (lauki)
    1 cup milk
    4-5 tablespoons sugar (adjust to taste)
    2 tablespoons ghee (clarified butter)
    1/4 teaspoon cardamom powder
    A handful of nuts (cashews, almonds, pistachios) - chopped
    A few saffron strands (optional)
    1 tablespoon khoya/mawa (optional, for richness)
    Instructions:
    Prepare the Bottle Gourd:
    Peel the bottle gourd and grate it. Remove the spongy flesh in the center and use only the tender part.
    Squeeze out any excess water from the grated bottle gourd.
    Cook the Bottle Gourd:
    Heat 1 tablespoon of ghee in a thick-bottomed pan.
    Add the grated bottle gourd and sauté on medium heat for about 5-7 minutes until it softens and the raw smell disappears.
    Add Milk:
    Pour in the milk and let the mixture cook on a low flame. Stir occasionally until the milk is absorbed and the gourd is well-cooked.
    Sweeten:
    Once the milk has evaporated, add the sugar and stir well. The sugar will release some moisture, so continue cooking until it thickens again.
    Add Ghee and Flavor:
    Add the remaining ghee, cardamom powder, and saffron strands (if using). Mix thoroughly and cook for a few more minutes.
    Garnish and Serve:
    Finally, add the chopped nuts and khoya if using. Cook for another 2-3 minutes until the halwa reaches a rich consistency.
    Serve warm, garnished with additional nuts.
