Enjoyed the review. I really enjoyed the theater of cooking on a Santa Maria, but ended up returning to a more traditional charcoal grill with lid. For one, I too had lots of smoldering on the firebricks even with intake vents. Second, wood takes long time to burn down to coals if you go that route. Lastly, the importance of a lid cannot be overstated. The lid is what captures the smoke, which is probably why I much prefer the taste of a more traditional charcoal grill like a kettle versus a Santa Maria. Even for tri-tip. But it was fun while it lasted and I would encourage anyone to try it.
@nordicwilly6650 I enjoy mine but it has become difficult this winter. I've found myself using the smoker a lot more till it warms back up. Happy grilling!

My grill has a lid that I never close when grilling. Thanks for the video might have to get one of those 👍
