Thanks Michael! Yeah these are really good. Side muscle is actually pretty easy to find and comes right off. If you don't see a side muscle on all scallops they likely fell off during harvesting or washing.
Heaven - scallops are one of my favourite seafood - after crab and ahead of prawn/shrimp. Delicious.
