      Thx for the info! Im going to buy a nonstick pan from mauviel, these are made in Normandy and not in China like Le creuset.

      Every year (except this one!) while in France, I buy Dehillerin cookware and bring it home to Canada. I think that Mauviel makes the Dehillerin line of cookware. On the pricing issue, you are right. Buying at the Dehillerin store compared to buying Mauviel through Williams Sonoma is ridiculous - you have to take out a mortgage to buy the equivalent piece from Williams Sonoma. Dehillerin, while not cheap is far less prohibitive. But above all, the cookware is exceptionally good and a pleasure to use. I alternate between Dehillerin and Paderno (sandwich bottom) cookware.

    First test done with the handles "marketed as as cool handles" I boiled water in the 16 cm saucepan (full to the top) with the rivet under the boiling water for 15 minutes long and the upper half of the handle was barely warm. so that's a check ! I confirm handles do not get hot ( that is if you do not place the handle near a flame from your other burners.) Note the electro plated handles do not go in the dishwasher)

      Wouldn't the cast iron handles be an inconvenience since they can't go into the dishwasher?

      @@vespasiancloscan7077 I personally NEVER use a dish washer. In my opinion, if you can't hand wash the same speed as you clear something to put in the dish washer, you need to work on how to wash dishes. I have a full suite of cast iron, and I've never had an issue. I'd love to have these to cook with, and spend 5 seconds cleaning after a cook just to have that level of detail.

      Anton Bonin Except dishwashers are great for keeping the kitchen tidy- who wants to wash up multiple times per day, usually for just a handful of items? Dishwashers also use far less water and energy than washing the same sized load by hand, and they reach much higher temperatures so are more hygienic if such things concern you. Personally, I would give up my washing machine before I gave up my dishwashers- having two means it's rarely necessary to fully unload them, clean stuff is taken from one, used, placed in the other.

      @@vespasiancloscan7077 These are NOT cast iron handles. They are what Mauviel call 'Iron electroplated handles' in stainless steel. The black paint will wear off over time, and many Mauviel Copper fans were disgusted, when Mauviel no longer sold their real cast iron handles.
      I still own two pieces from the Mauviel M250C line with these new fake cast iron handles and lets just say, that I'm not buying Mauviel M250 copper cookware anymore.

    I'm the opposite of you. A Canadian living in France. Mauviels aren't cheap but they are worth every penny. Buying a set was one of the best decisions we ever made.

    I have many pieces of the m'cook Mauviel with the older cast iron handles. At one point their forge that made all their iron handles for all of their cookware burned down. This is why the Mauviel cookware suddenly started looking different as far as handles go. I personally love the look of the dark iron handles on the shiny stainless. I first saw this cookware used on the TV Food Network here in the US by chef Anne Burrell. I love mine and use it all the time. For copper I prefer the Matfer Bourgeat copper and the Falk Copper. For some reason Mauviel does not make the same shapes for their copper pans with the flared edges, which are so much nicer looking and functioning than the straight edges, as you can pour well from them. I believe I currently have about 9 of the m'cook pieces. Thank you so much! I know you are going to enjoy them and so glad you can show the world how wonderful they are. A bien tôt!

      Agreed, I much prefer the Bourgeat cookware. Great handles, super conduction, very easy pour and the shap of the pans is what sold me, plus the very thick copper. Very heavy pans.

    I have two Mauviel copper pans and one stainless pan. I love them over all my All Clads. I bought All Clad when I was learning to cook and Mauviel after I learned.

    I discovered Mauviel 10+yrs ago and use it more than Le creuset. I have not seen any chefs in the US use Mauviel. They either use le creuset or their own branded cookware (which mimic Le creuset). Congrats on 400k+.

    Three years ago I wanted to get the best pots and pans I could find. And after an extensive research I came across Mauviel. I debated for a while between Mauviel and All Clad. And I ended up getting Mauviel.
    That has been the best investment I've made in my home. The performance is AMAZING! The heat distribution and the speed in which it cooks is incredible. Just the other day I started making 2 dishes at the same time. And I started by sautéing onions in one of my Mauviel pots and the other pot was a cast iron dutch oven. And I was amazed to see that the onions came to a brownish color much faster than the cast iron did. When you enjoy cooking and you do it on a good equipment like this one. It becomes much more pleasent and enjoyable. So I highly recommend it for whomever is willing to invest on a set of pots and pans.
    I live in the USA and I got my set at bed bath and beyond. And they gave me 20% off. Which was amazing!
    Whats also impressive is they're still shinny. And btw. The handles on the lid will get hot. (I have the stainless steel handles). So I put a cork under the handle and it solved that problem.

      That’s called sponsorship. They send you all of their wares for free and in return you are under an agreement to produce a certain number of videos featuring their products. Many times the company that is sponsoring you will also give you a nice paycheck or two. This is what many you tubers are aspiring to achieve. Good for him. Producing videos on a small budget is not easy. When you get to the point where you have a big enough following you can’t blame the man for getting compensation

    I arrived in Australia 12 years ago from the US with my set of All Clad and Staub cookware I had no idea I had a small fortune worth of pots and pans🤦‍♂️ I will say Mauviel makes beautiful copper cookware as well.

    I recently splurged on a small (10 cm) all cooper/tin-lined Mauviel sauce pan. The temperature response is phenomenal. Terrific for delicate sauces.

    Here I am, I thought I was out of my mind when I bought a Le Creuset 7 1/4 qt Dutch Oven. I forget the price I paid every time I fry some Shimp, do short ribs, or just boil some pasta. I am just a single man that cooks because he has to. I have gotten to like it a lot and I will say good cookware makes it easier because you don't get the uneven heating. I become pretty much a cast iron junkie since I was given a Stargazer. Now I am slowly saving for a 14 qt Stock Pot from a maker in Brooklyn, NY. I am really gotten into making stock. One day I think I will have a full set like the one you have.

      look by the look of it you found the type of cookware that fits your style and that is the most important. cookware is one of those things that when it feels right there is no need to look further. I do believe that there is a type of cookware for everyone. it's all about the ergonomics heat performance the looks, the heritage etc.. but at the ends of the days if a particular set of cookware make you feel inspired to cook then that's what matters😀✋

      @@FrenchCookingAcademy Yep, think I have. I am looking forward to fall and winter, I love to do braised short ribs. One of my friends is a wizard with a crockpot slow cooker. I work long hours, turn the thing on before he lives for the shipyard and dinner is ready after the long day. The Venison Roast he did the other day was well we ate it all too.

    When purchasing Mauviel check it is from the M cook range all Mauviel cookware is superb but the M cook is the Rolls Royce.

    Starting about ten years ago, Mauviel went from three rivets to two on their cookware. Not a fan of the corner cutting and very glad I bought most of my cookware when they used the three rivets. Also, I bought when they had the actual cast iron handles. Not this anodized stuff.

      Most copper cookware made between 19th-20th century have 3 rivets to their handles, solely because the pans were substantially thicker and heavier but the rivets back then were either made of copper or aluminum which are much softer than steel, therefore to sustain the weight of those heavy pans three rivets were usually used instead of two. Nowadays cookware rivets are made of stainless steel which is much stronger, two is more than strong enough to handle the weight, also, there are people who hate to see rivets on the interior so I guess for many two rivets is actually an improvement.

    When I, just recently, bought new cookware I was actually eyeing up the the Mauviel m'Cook series, but I ended up going for the Affinity series from de Buyer, as it was simply more readily available here in Denmark, plus it has the same style of build as the Mauviel's and all round look and feel quite similar. So far I've been very happy with my choice, the quality has been impeccable, and even the packaging was almost exactly the same as the one you showed in the video. Anyway, it's always nice to see some quality French cookware, and I'm looking forward to see all your nice dishes be made in such beautiful cookware, it'll only make your videos even more pleasing!

      When i decided to improve my cookware I did face the same dilemma like your. Which brand to choose between these two french leading manufacturers (MAUVIEL or De BUYER )of quality cookware . By holding some of the pans in my hands I felt more confortable with de Buyer AFFINITY line items due to theirs larger handles compare with the size that Mauviel chose to put on their products. When you manipulate for instance a fully 2 or 3 liters pans you will definitely feel that you'ill get a better and safer grip of your pans .That said , Mauviel and De Buyer are both excellent products that I would highly to anyone who enjoy cooking. And by the way these products will last all your life .

    How would you compare and contrast Mauvel with traditional French copper cookware? Also, wouldn't a better test of Mauvel entail preparing the same cuisine in a standard pan and then preparing the same dish using Mauvel, then comparing and contrasting the two? I'd personally be interested in that!

    Thanks for the brief look at your new set of steel Mauviel. I personally prefer the 2.5mm copper, inner cladded with vg10 grade stainless steel inside. Fantastic cookware, a must for sauce pan! No longer need to re tin like the old version. I've used Mauviel that are still in great condition after 60 plus years of heavy restaurant service. Hand made with great care. I hope Mauviel continue to make the finest products in the world for years to come. I assume the restaurant industry has suffered greatly and Mauviel are reaching out to home cooks now.

      What handles do you have? I’m considering buying the m250b set since it’s on sale and had key pieces I use but the handles are bronze so it will get hot. I love the look tho!

    Hi Stéphane, nice cookware and presentation. I have a few Mauviel items in my kitchen including some copper. I’m in Canada, and Mauviel is widely used here and reasonably priced.
    I personally prefer to work with my old Viking (maybe because I’m not French 😜) that was built in Belgium with 7 layers bottom to top, but you won’t see the difference between 5 and 7 layers.
    So enjoy your new toys! They are truly solid and elegant

    Compared to Demeyere’s top of the line. I’ll have to check these out. My kitchen is totally Demeyere.

      I think you'll find, that Demeyere - if it's the 7-PLY line (Atlantis or Pawson) is superior built, but Mauviel M'Cook has better response time due to being thinner PLY/Clad. I own 10 pieces from the Mauviel M'Cook line BTW. I'm more into copper 2.5 cookware though, but Mauviel M'Cook is an okay performer.

    I was hoping to see mauviel copper with tin lining...my favorite pans!! And the original French cookware...including solid copper sugar pans and copper bowls for whisking egg whites...nothing can compare!!

    Very nice Stéphane! I like the big hook hole at the end of the cookwares' handle; it's perfect to hang the wooden spatula while cooking. One can see that they are of a superior quality and great workmanship. I'm looking forward to seeing you cook in them.😉😊

    Bonjour Stéphane! A huge Francophile here also in Australia. I just bought MY VERY FIRST Mauviel Copper and Bronze saucepan today from Williams-Sonoma. Upon my search on YT, found your site - got very excited when you mentioned you're also in AU...! But upon my search on Phillip and Lea site, their price was only $5 cheaper for the piece I bought. HAHA... But, I guess I now know where to get more when I'm expanding my range. I''m looking forward to watching more of you cooking with the Mauviel (copper) range. (You're right, no one is cooking with this range on YT, I searched!) HAHA..

      Beware - bronze handles get HOT HOT HOT....ouchhhhh. Looks great but you burn your hands badly on the bronze handles - just a FYI

      @@AL-cu5gi I perfectly understand - they look great, but there's a reason very few actually use copper pans with bronze handles - they get hot in seconds and can burn your hand badly, cast iron takes far longer to get really hot. I agree, they look great - but I can tell you right now, that you'll burn your hand badly, whenver you forget to use a kitchen towell, when cooking with the pan.

    Bonjour Stéphane. What is your opinion of copper cookware? Do you think it has any advantages today, and is it better to have a stainless steel or tinned lined pan? Would it make a difference in searing or braising or is the extra maintenance just not worth it? I see that they are not used in many professional kitchens today, but probably because of the switch to induction.

    Beautiful set! I started collecting All Clad a while back, and have been quite happy with the performance. I think unless I find a killer deal on a Mauviel pan, I’ll stick with the All Clad, as none of it is cheep. Not to mention, for me, the All Clad is not imported, so no extra costs associated with the pans.

      The new Mauviel pans look very similar in design to our All clad pans that will be 30 years old next month, except the All Clad have stainless steel riveted handles instead of wrought iron. I think the shape of the pans are based on classic French cookware.
      It is a pleasure to see how much our Chef is enjoying his new cookware! And as a fan, I am looking forward to seeing it in action for many future cooking adventures. Bon appetit!

    Just got the complete mauviel copper set and I’m in love. Expensive as heck, but man do they work great.

      @@tiklemeangi it was the 12 piece set with just the normal copper finish and the stainless lining. I will say, they will tarnish very easily if you don’t clean them and dry them well. Also fingerprints tarnish them on the lids. I just keep a little tub of mother’s mag and aluminum polish under the sink and when they get to looking gross that stuff takes it back to looking brand new in minutes. The vinegar and salt trick will ruin the mirror finish so don’t do that if the finish matters to you.

    Awesome packaging- no plastic! It looks gorgeous! I may have to look into this, but I probably can’t afford it.
    I’m pretty happy with my All Clad, cast iron, and enamel Dutch ovens.

    I just did the same! I upgraded to M'Cook and also use a Mauviel carbon steel 11" skillet. I found Amazon to be the best source. As much as I like to honor other vendors, I just couldn't find them readily available. I limited my first set to the 11" skillet, 3 qt saucepan, 2 qt splayed saucepan, .9 qt saucepan, and a 6 qt stewpan. I already have a large all clad 20" skillet with straight sides that I use as a rondeau. What should be my next Mauviel? A rondeau or a larger flat saucepan?

      I’ve found lately that Amazon has not done a good job of keeping Mauviel carbon steel products in stock. Most of what I see are the crepe pans and those splayed country fry pans-both of which are, I assume, not great sellers. And the Mauviel USA website is gone...just disappeared! Oh, and not to mention, my two emails to Mauviel headquarters in France went unanswered

    That is a beautiful set of pots and pans. I bought a set of Calphalon a year or two ago that's pretty good. I had almost gotten a bunch of vollrath pots and pans from a restaurant supply company.

    I'm quite jealous - my wife and I were talking about upgrading our cookware not long ago and I was drooling over the Mauviel.
    We ended up buying a pair of Matfer black steel pans but I hope someday to get a set of copper pots.

    Bro. I really like your channel and videos but when people talk of Mauviel cookware they are specifically talking their copper lines either tinned or SS. If you just want aluminum clad cookware then all clad or even a discount brand such as tramontina is just as good. It’s all about cooper cookware 3.5mm thickness. That’s the real deal.

    Have been collecting Mauviel tin lined copper cookware for a couple of years now. Love it’s performance over my previous cookware (Calphalon original hard anodized aluminum). Can’t wait to see what you create with the new Mauviel.

    I have 2 Mauviel "professional" copper pans that I use all the time, even though cleaning them after each use is time-consuming. Nothing distributes heat as well as copper.

    I have (this far) only one Mauviel pan: a small 9” or so M250 copper saute’. Had put off buying one for eons. But oh my. I honestly cannot explain why this pan works so darn well; it just does. Somehow, everything I’ve made in it has been so inexplicably nicer, so full of detailed flavor... weird. In short, I bleeping love it! As I’m able, I too will be swapping out for these.
    Oh! And don’t let caring for the copper put you off! Just do as they say and all is well. Their polishing paste works immediately, too, but is unnecessary.

    I have one Mauviel M250C 10 inch pan and one Demeyere Atlantis 12.5 inch pan and I have to say, the performance of copper cookware is unbeatable. If anyone can use the benefit of sale price, I say it's worth to do.

    America's test kitchen says three layers on the pan bottom is better as opposed to five, AND pans with the handles molded on and not riveted are better...…however, I DO have one Mauviel piece - a six quart all copper stock pot. I'm afraid to use it.

    Wonderful presentation! I have been assessing Mauviel cookware for quite some time, and am going to make a purchase soon; I am in the United States, and finding good reliable merchants has been a daunting task. I have a wide variety of cookware, select pieces for select cooking tasks, and it would be nice to have a small set of Mauviel as a unified set, but I will never part with my Le Creuset, or some of my vintage copper cookware; I shall only add to my arsenal of cookware.
