Was finally able to try this out. I did use pimento wood chips and leaves ordered from the site you showed in the video. This came out SO good ! I've been trying to duplicate jerk chicken I get from this Jamaican shop and this was spot on.
Never seen a fermentation without vinegar in it to start. Super cool. I love it. I absolutely love jerk chicken. I am totally doing this. Thanks so much for sharing. Yum!!!
Great video, and great format James. Quite a number of things to learn here, the bay leaves hack got my attention. I'll figure out to incorporate that on other recipes as well.
Hey James, that was simply awesome. I can't wait to try the jerk chicken recipe. Special thanks to your guests who shared their little secrets. Their sauce looks delicious.
wow! Thanks for the collaboration, and this topic is fantastic! love the tricks for trying to make authentic jerk chicken. I'll definitely be trying this!
I'm surprised you haven't heard about "W Sauce" -- This is a fantastic new variant produced in the US. They call it "America's Worcester Sauce". Fantastic stuff.
Great video! I just read that somebody beat me to it, but I was going to suggest maybe adding the berries along with the wood chips. Ash drawer might be safer. Thanks for sharing!
Ill try out their hot sauce. I am absolutely a hot sauce lover. I have a standing order with "Hot Ones" and I Ive tried hundreds of hot sauces. I am always happy when a new company/brand comes out. especially when it is a small company.
@@SmokingDadBBQ I bought the box of fury. Ill give my honest review here in the comments. I hope it lives up to the name. I like it really hot, and I like flavor. that is a hard combination to achieve. Im very excited and I hope its good
awesome vid. I'm going to try the chicken and sauce and order some. Why did you put the grills on teh lowest setting on the rack? Is it because they were on the solid metal pan?
What do you mean for "Coming along"? I got a plane ticket and need your address so I can do a taste test. I bought myself a Box of Fury! Never had Jamaican chicken so I got to try this. I love hot sauces too. Interesting selection of background music you picked "Cockroach On Toast"!
Will Kamado Joe replace the lid to the Classic III if it arrives with a large chunk of exterior cermanic missing from the lid directly under the tension bands? Do you think it is safe to move/use in case they won't repair/replace? You seem the KJ expert and customer service takes 5 business days to respond.
I'm in Chicago too and have the same problem! I always use habanero but would love to know where to go for scotch bonnet. I've tried Jewel, Mariano's, Woodman's, Whole Foods, Heinen's, Sunset Foods, H-Mart, and probably more.
No Avocado/Olive oil, white vinegar, Orange,Lime Juice??? Beer? I'm a hard pass on the jerk marinade. I'm sure it tastes fine but it's not jerk to me without these ingredients.
I love your channel, but you honestly could've found some legitimate Jamaicans and make Jerk chicken for a living. That's like finding Swedish people to make help you with an authentic Taco.
Protip - For traditional pimento wood smoke flavour, rather than bay leaves try adding some allspice berries to the ash drawer
Love it
Great to see you growing the channel with collaborations and new content like this 👍
Appreciate it!

safety first, lol!! This was a fun one, James. (and nice to see Mrs. Smokin Dad!)

Ya that was new for me too
I’d recommend foil wrapping the pan though. That was a pain lol

Wow, James! That was really thorough and I can’t wait to add this recipe to my game! And that fermented hot sauce looks killer!
Thanks Al
That was some awesome looking Jerk Chicken. I've never tried making hot sauce but I might just give it a try. Great video.
Hope you enjoy

A NY fan from Mandeville, Jamaica. Watching very closely with my “audit” hat on!🧐
keep us honest, been trying to get this closer to vacation taste in Jamaica for years
What kind of no rinse sanitizer are you using here? Also, can we get a link to get the fermenting jars/lids?
Where can you get Scotch Bonnet peppers near Chicago ??? I can't find them......
awesome vid. I'm going to try the chicken and sauce and order some. Why did you put the grills on teh lowest setting on the rack? Is it because they were on the solid metal pan?
i dropped it right before removing the chicken to sear the skin side... it started up high
I will check out that Fury sauce. No way I am making it for two weeks lol
Haha. Al pastor is my favourite one

Hahah it’s at the end of all my videos for the end screen

I’d take lots of pictures for warranty and then use it
Ok
Where can you find scotch bonnet peppers? I’ve looked for them before, even at some Caribbean food marts in the Chicago area with no luck
can you find habenaro?

I live where Worcestershire sauce is from.
It’s pronounced like wor-stir-sher sauce
this is my new years resolution ... one day i will get it right
Old mate pronounced Worcestershire properly.
At 1 and a half minutes the audio is gone for 2 minutes. 😊
can you try refreshing, i just watched and had no issue
For me its still there. The in screen effects have sound but no talking for 2 minutes.🤔

Wus-ter-sher
its my news years resolution lol
Dunno in what world habanero are hotter than scotch bonnet peppers
Most scales have them both ranging 100-350k
