    Protip - For traditional pimento wood smoke flavour, rather than bay leaves try adding some allspice berries to the ash drawer

    Was finally able to try this out. I did use pimento wood chips and leaves ordered from the site you showed in the video. This came out SO good ! I've been trying to duplicate jerk chicken I get from this Jamaican shop and this was spot on.

    Never seen a fermentation without vinegar in it to start. Super cool. I love it. I absolutely love jerk chicken. I am totally doing this. Thanks so much for sharing. Yum!!!

    Great video, and great format James. Quite a number of things to learn here, the bay leaves hack got my attention. I'll figure out to incorporate that on other recipes as well.

    I'm surprised you haven't heard about "W Sauce" -- This is a fantastic new variant produced in the US. They call it "America's Worcester Sauce". Fantastic stuff.

    Great video! I just read that somebody beat me to it, but I was going to suggest maybe adding the berries along with the wood chips. Ash drawer might be safer. Thanks for sharing!

    Ill try out their hot sauce. I am absolutely a hot sauce lover. I have a standing order with "Hot Ones" and I Ive tried hundreds of hot sauces. I am always happy when a new company/brand comes out. especially when it is a small company.

    awesome vid. I'm going to try the chicken and sauce and order some. Why did you put the grills on teh lowest setting on the rack? Is it because they were on the solid metal pan?

      i dropped it right before removing the chicken to sear the skin side... it started up high

    Will Kamado Joe replace the lid to the Classic III if it arrives with a large chunk of exterior cermanic missing from the lid directly under the tension bands? Do you think it is safe to move/use in case they won't repair/replace? You seem the KJ expert and customer service takes 5 business days to respond.

      I'm in Chicago too and have the same problem! I always use habanero but would love to know where to go for scotch bonnet. I've tried Jewel, Mariano's, Woodman's, Whole Foods, Heinen's, Sunset Foods, H-Mart, and probably more.

    No Avocado/Olive oil, white vinegar, Orange,Lime Juice??? Beer? I'm a hard pass on the jerk marinade. I'm sure it tastes fine but it's not jerk to me without these ingredients.
