    Typically, when I vacuum seal wetter foods, I put them in the vacuum bag and directly into the freezer. I seal them the next day when the moisture is solid 😊. Works great!

    As Always much Love from Okc ❤ I'm having a 2nd pancreas surgery Aug 11th so I've been canning Alot and dehydrating some things to make space in freezer. I will be in hospital for a month so everyone(hubby& 20yr son) is wanting pizza and burritos for convenience😂 while I'm away. Everyone please keep me in your thoughts and Prayers please and Thanks as well🙏🏽🙏🏽

      ❤💫 Prayers that your surgery goes very well and you have a quick and complete recovery. January 2012 I had the Whipple procedure due to stage three pancreatic and common bile duct cancers, then followed by chemo. The Lord God Almighty graced me with recovery, survival and gratitude. I live a humbled life as your eyes are wide open after such things. ( the 1% at this time) We are definitely not in control ❤. Love and light, and a big hug to you💫🥰☝️

    I loved it when you said that you do a small amount of preserving everyday. Ive been doing that now and it works great❤ I have been drying herbs, making pickles and freezing blueberries. Quick projects and not overwhelming.

    Another great video Jessica! This week I've done peach preserves and peach butter, dried lots of herbs, froze my onion harvest, started almond extract, and canned chicken broth. Today planning to get tomato sauce, 2 kinds of salsa, and corn on the shelves!

    Just want to say thanks for the inspiration. I’m enjoying finding ways to preserve what I have as well as making future meals easier. This last week I dehydrated zucchini shreds, froze 2 bags of diced tomatoes, made 2 pints of pear sauce, and vacuum sealed 4 batches of dry ingredients for cornbread. (I just remembered - and a pint of dill relish! Really excited about that one!) Not a huge pile, but as you say, better some than none!

    My potatoes didn't flower either this year!! And they are completely dieing back! I need to get hubby out there digging😅 but I can't say I've had too much success when it comes to potatoes anyway!!! I also just invested in a new dehydrator because mine kicked the bucket unfortunately so I really can't wait for it to show up so I can start drying some of my herbs!!! ❤

    I have taken on the your challenge, I dont have a lot to put away some days, but 1 cup of blackberries is better then nothing. Every little bit counts, they will taste really good in the middle of winter

    I make my beef stew almost exactly the way you do. I do add a heaping spoonful of tomato paste to each jar. Tomatoes are a natural tenderizer and he's to make the meat more tender. I think you'll find you like it if you want to give it a try.
    Actually beef stew was the very first thing I ever pressure canned. My husband looked at me with scepticism 🙄 but after trying it he now says he doesn't want beef stew any other way😁💞

    Living in an HOA means having chickens and eggs is not in my current range but it's a dream that I hope comes true soon. These are some really good tips especially as I can garden and can use the other preservation tips.

    The same thing happened to most of my potatoes too. I saw one plant flower and it immediately died. I blamed our super wet weather here in Vermont.

    We puree up our tomatoes and can them every year. Then we use them as tomato juice to drink or to add to recipes throughout the year. We love it. I also boil it down for pasta sauce, pizza sauce, and ketchup and can them too. We used to remove the skins first, or put them through a juicer, but it seamed so wasteful. And those nutrients may as well be in us rather than in the compost.

    I slice and shred zucchini for freeze drying. Now I must do the noodle sheets. Already dried and perfect for lasagna. Great idea!

    One piece of advice take a tea towel or a lightly wet paper towel under your cutting board so it doesn't move while cutting items.

    To vacuum seal shredded zucchini, shred, put in vacuum seal bags, then FREEZE, then seal.

      I do a little of both. I like the frozen peppers for fajitas and the freeze dried for soups and casseroles.

    My daughter and I got 41 quarts of potatoes done yesterday that was the second 43 quarts for the pantry. I’m 75and we both have health problems. And the deer’s got and ate our tomatoes plants.with carrots we can’t grow one.we buy from the store and can them to.

    Love your videos that motivate us Jessica. I'm preserving everyday also. I've been canning pasta sauce, tomato juice, black berries, and Sauerkraut, then dehydrated zucchini, cherry tomatoes, Make pesto and dried basil so far this month. Trying to do a little bit everyday of this challenge. I have a big bucket of sauerkraut working in a food grade 5 gallon bucket, that I'll check on tomorrow. Busy month but glad my garden is about done for this year. Lots of stuff in freezer, and I need to do a pull and make a double canning of vegetable soup. All will be good for the winter months. You are an amazing woman Jessica, I know Adam and your babies are so proud of you. Have a blessed day.

    After you use the eggs you water glasses, what do you do with the calcium hydroxide water? Does it go in the garden, does it get used as weed killer? I’m s it safe for a septic system? I am not sure what to do with mine.

      Not yet. Our rhubarb is young. Hopefully next year I can preserve some. I will mostly chop and freeze for baking.

      I make stewed rhubarb (chopped rhubarb cooked with water, sugar, and lemon juice) then I freeze it in used yogurt containers. When thawed, I eat it over plain Greek yogurt.

    I am full of questions; i have stone countertops, and I’d love to know what I should do with my hot jars 🫙, I don’t know if a towel on the counter is enough, as I find our counters are really cold. (We have air conditioning) should I place a wooden board and towel on top ?

      Absolutely potatoes should ALWAYS be peeled, they are a root crop and high risk for botulism. I hope you see this before she deletes the comment like she did my others sadly. I don't mess around with unsafe canning practices and my family. Please don't follow her canning practices.

    Hi Jessica. I couldn’t help but think about how much people actually pay at the grocery store for the tiny potatoes. I live in Ontario Canada and those spuds cost almost 6 bucks at some grocery stores. U might get 15 tiny potatoes. You’ve got a gold mine in that box lol

    Warms my heart that my daughter is now canning food for her 10 month baby and her husband. She knows the importance of fresh home grown food because she was raised that way. And now days its so important to know where your food comes from and what is in it. Even if you do not have a garden, support your Farmers Markets and local farmers and preserve it.

    Good morning Jessica! This week I've preserved spearmint tea x2, made cherry jelly from pits (ala Meg Hollar), made cherry preserves, dried lavender tea, and canned 15 pints of peaches for winter eating. I still have 2 pecks of peaches sitting on the kitchen floor to be preserved. Most of those will be made into pie filling probably tomorrow. Because of your encouragement, even on the days I have zero spoons left, I'm harvesting herbs to dry for winter tea. My garden this year is NOT producing - other than herbs - so I've had to purchase ingredients with which to can. I was glad to see your proportions in making your (instant) beef stew. That is one of the foods my sons truly enjoy, and I typically can all of the stew meat immediately when my cow arrives, making it an easy meal to prepare through the winter. As you worship this morning, I would solicit your prayers, as I'm expecting an ugly confrontation around noon. I've gotten 3.5 hours of sleep, which is not optimal, as lack of rest typically brings on migraine or other health issues.

    I am trying to do this challenge also. So far, today being the 8th I have preserved figs two ways, tomatoes 5 ways, Butterbeans frozen, okra canned, carrots canned and frozen banana peppers. 😍

    i remember stumbling across this channel when i was down with a flu as well as at the lowest point in my life. i believe watching these vids helped me to regain my interest in collecting wild herbs and, in general, being closer to the nature❤ currently, i'm enjoying my everyday life and using the "every man's right" to pick berries out in the forest as well as herbs for "medical" purposes

    Yesterday 4 quarts green beans, 20 pints diced and 7 qts diced tomatoes. Incredibly tired, but I have pizza sauce cooking down in the roaster today.

    An abundant week for you! Thank you for always sharing your knowledge and ideas!
    We down sized our garden this year due to season of life plus planted very late so our harvest is just getting ready to be ready. We did get an abundant of zucchini this week so I made Mock Pineapple with it. First time making that and it turned out delicious!
    We purchased our plants from 3 sources this year and have discovered a lot of mix up plants. For example half of the "romas" ended up being cherry tomatoes. I bought jalepenos and cheynne peppers but none of the plants turned out to be that. No idea what hot peppers we ended up with. We've never had this issue before.

    Spent yesterday canning sweet hot peppers (although I didn't have nearly enough) and then decided to make crushed tomatoes. Going to work in my garden this morning. Should be harvesting my last row of potatoes and seeing how many more peppers I have. I really enjoy these videos and reading the comments about preserving. Zucchini was coming in well so I shredded the large ones the other day and will be making zucchini crab cakes (no crab) and chocolate zucchini bread later in the week.       I ❤ mock crab cakes using shredded zucchini!! Put away a ton of freezer bags just for that purpose. A bit of old bay and roumalade, you can't even tell it's not crab

      Oooo! That sounds yummy! I became allergic to crab in my 20s😢, but still would love to try your recipe! I even have Old Bay in my spices ❤

      If you look up the recipe for Connie's Zucchini Crab Cakes, you should find a few renditions of it. I have a salt restriction so I have to make a saltless Old Bay Seasoning that I also found online and changed the celery salt to celery seed. It works well for me. I do peel and deseed my zucchini first though as the larger zucchini (the size of my arm)can be rather tough. @@heatherk8931

    Good morning. This challenge is so fun fun to watch to see what you can do on a daily basis. Such good ideas. 💜 I am also watching Sara @Living Traditions Homestead.     Our potatoes did the exact same thing this year. We're probably 4hrs west of you. I wonder if it was also weather related this year!
