If you use the quick connect feature in NordVPN then you usually don’t get the captcha because then you connect to the same country you are in. I never get the captcha but I recommend you to switch to Duck Duck Go. I did over a year ago and don’t regret it. It’s so much better for your privacy.

Yes of course. Quick connect means that it’s the fastest way to connect. It finds the fastest server nearest you. So it is the same security as if choosing which server you want to connect manually. No difference. I always use quick connect.
I live in Sweden and my WiFi bill has never shown which sites I’ve visited. Not with or without vpn. But a vpn protects it so that your internet provider can’t see which sites you visit.
Restart app, restart phone. It should work. Nothing wrong with the app or servers. I am connected to Openvpn udp just now. So try restart your phone. It’s your phone. I’m sure.

If you want to see something from your country then set the vpn to your country. All channels doesn’t work with that trick though

Then just turn off always on and simply disconnect. Then you are not using the VPN and is not protected anymore.

They only see a connection to a VPN server in Norway, not that it’s you and not what you are doing.
