I'm going to pin a comment at the top here for anyone who has come up with variations on this recipe and their results. I'll go first. I tried this with 1 tsp of nutritional yeast (to see if it would bring out more cheese flavor) and 1/2 tsp of garlic powder. I also baked at 280F for 60 minutes, then turned off the oven and let them sit in the for an additional 5 minutes. Taste wise, they were a bit bland. I don't think the yeast added anything significant, and next time, I'll definitely up the garlic to a full teaspoon. In terms of the baking, the lower temp and longer bake resulted in almost no moist "batter" at the bottoms of the puffs.

I added 1 T of fresh frozen Chopped parsley and a dash of garlic powder and a couple dashes of pink Himalayan salt and freshly ground black pepper. Yum! 😊 Thank you so much for your recipe. I forgot to say I made a double batch.
Could you make bigger versions and pipe something like a mousse or pate into the centre? Or even a dark chocolate sauce and treat them like choux pastry balls?
@@broadsword6650 I don't think they'd puff up enough. Structurally, I don't think they could handle it. That said, I have reheated these and pumped some spray cheese into them, so the concept definitely works.

oh yeah, radishes are great. You should try slicing them thinly then sprinkling some salt over it and letting it weep for a bit. They are great as little radish pickles. I learned this while adding some to my saurkraut ferment and find I like the salted radish almost better than the kraut!
I usually just roast radishes…lol! 🤷🏻♀️ There’s some real culinary innovation and experimentation going on here. Only through tenacity does one accomplish that…like dog with a bone, refusing to let go of it until you get a result you’re happy with. There’s no one else like you in the keto world. Ooh, these look and sound delicious, Steve! My initial thought when you said popover was to make them in a mini muffin tin. I could see adding finely minced green onion and perhaps some cheddar and serving them with sour cream or a homemade ranch dip. I so love your videos!! Great job!! 👍👍
I made your radish potato salad during a family gathering last week and it came out amazing! I was afraid no one would eat it but it went quick and everyone was so surprised it was radish. Now I can't wait to try this radish recipe!! Thinking some kinda cheese dip would be good too??? I'm thinking pretzels lol

Won’t lie, I did NOT expect these to be so addictive! FTR I boiled the radishes and blended all the ingredients, bagged in a ziplock and tossed in the fridge for use later. Works amazingly. I shoved them in the oven as it was preheating and started the timer when it came to temp. Also, because they’re cold, the product is thicker and I got fewer puffs from it.

I discovered a magical thing. When you boil radishes the thin pink skin just melts into the water. No need to peel the radishes. Very pretty color . My radishes are boiled today. Will try recipe tomorrow
My memory of radishes are my grandfather in the 1970s eating them raw from his garden dipping in small dish of salt! thx for this reminder and I will give this a try! :) from ontario, Canada
I let my daughter grow radishes when she was little but I never liked them. I had no idea they could be cooked! 😮 Your ideas are great and there's space in the garden for foods I'll actually eat so I guess I'll be planting radishes. 👍

I love it when you do experiments! I saw a recipe fly by on a reel a while ago that used potatoes in the same way…and then they piped about 1/3 of what you had with the puffs about 3” apart on parchment. Then you put another piece of parchment on top and squash the heaps with the back of a glass with flat bottom. Then bake with the parchment on top and bottom. I did it the paste with whey protein powder instead of potatoes and it worked! So thin and crispy! Doesn’t take long to bake. Basically a Quest chip but stronger. Chips! Imma try it with your radish recipe…keep on experimenting!
@@barbarasnow4304 the trial was with 30g of whey protein isolate powder 1/2 tbsp whole psyllium husk 1 tbsp oil 3-4 tbsp warm water and spices..not sure about the psyllium husk tbh…next time maybe ground Parmesan instead…more flavor and fat/salt But I am going to use Steve’s radish puff recipe as written for my experiment. Executing the technique with the piping- 2 parchments and flat glass bottom flattening the blobs worked out really well with the protein powder. Rendered an excellent chip in less than 15 mins. 325 degrees for 5-10 mins depending. Made 40 chips!!!

Great recipe! I’ve made cooked radishes with cream and chives forever but this started my mind thinking and hoping I could make one of my favorite Asian recipes “radish cake” which is made with radish and rice flour and then stir fried with eggs and green onions- maybe I can tweak this for that! I didn’t have parm cheese so I used shredded mozzarella and some cheddar cheese powder. I really liked them. They puffed up really well and had a nice smell. Mine did deflate after a while. They looked like Tom Brady got a hold of them. I will definitely make them again and add more spices.
We brought some radishes au gratin to my aunt's house and my grandma raved and raved about them. I think I'll give this a shot once we're done with Triple B & E.

I love radishes raw. It’s interesting that they resemble gougeres, those little pate a choux cheese puffs. I don’t eat strictly keto by any means (fat malabsorption/pancreatic failure) but this recipe falls in my dietary Venn diagram lol! My son is a big city pastry chef who makes mountains of cheddar gougeres every day and I’m betting he’ll love this variation as his restaurant gets many requests for lower carb treats. Thanks!

Just to be clear: the tater tot experiment was a failure that led to these puffs. These do not have the consistency of tater tots.

if you double up your parchment paper (2) layers per pan. You can make extra crispy fried goodies and easy clean up!
Definitely need to try this. Am so glad it is an oven recipe - so many recipes use an air fryer. 🙂
