It does but if you looking for more specific instrument isolation you will need something like lalal ai. Logic groups all instruments other than bass or vocals into its other category. Sometimes you want just strings for example. Or just the guitar

You can but not specific instruments if that's what your looking for. Most instruments will be grouped under the other stem
