Hey kim that rice is called basmati (pronounced as baaas- ma-T) it’s a very good quality of rice and we eat it everyday. To make it less dry and good for fried rice you shd wash and soak it for 15/30 minu s in water before cooking. And to cook it, boil two cups water for one cup rice and just throw the washed rice in the boiling water. It turns out perfect

Great ideas! i'm going to make that pineapple dish for dinner tonight. Looks delicious! Kim, have you tired corn on the cob in the Instant Pot? Easy and delicious! just 1 cup of water in the bottom, I put the corn on the rack, 2 minutes high with quick release at the end. Try it!
I felt like I was on a roller coaster🎢 on this one 😂! Oooh pineapple. Nooo eggplant. Oooh kale. Nooo sugar lentils. OOOH that FIG knife! The attention span of a goldfish, I have. Love it!
For the tropical rice try adding some coconut milk to make it less dry. It's delicious! Also, some Indian spice suggestions: the curry paste you can get in the jar, garam masala, turmeric, curry powder, chili powder, and that's all I can think of off the top of my head. Indian food is my absolute favorite! I would die for a samosa (it's spicy potatoes in pastry crust that's deep-fried mmmm so good!). As for finding recipes, I would just Google some Indian food and see what pops up. Some of my favorites are butter chicken, Rogan Josh, and then basically any kind of curry lol.

THE WADS Also if you are interested in Indian food and like sea foods, try Kerala food. It’s where I am from. It might be really spicy for you but spices are very mild. And we use coconut in everything, that includes coconut oil and coconut coconut milk. I don’t eat non veg so I can’t give any sea food recipes 😬
Kim, most Indian dishes call for curry powder, cilantro, and turmeric. I also add garlic to just about anything. Red curry paste goes a long way and adds a ton of flavor. I'm vegetarian and have found a lot of Indian crock pot recipes. Chick pea cauliflower curry is one of my favorites. Maybe try googling vegetarian indian crock pot recipes.
I don't eat chicken, pork or lamb, only beef. I am lactose intolerant and don't eat beans, lentils or chickpeas and it is sooooo hard to find foods that i will eat, but i love your videos because there so inventive and easy to change different ingredients to suit! Thanks Kim

That is the best balsamic glaze on the planet!!! I've been using it for about a year and for an easy snack I drizzle some on some grape tomatoes and fresh mozzarella pearls and oh my world, it's amazing. They also make a strawberry one I think. I must make the pineapple rice tonight. My mouth was drooling watching you make that!

Great looking meatless meals. I could never get away with meatless when my husband was alive. The pineapple looks so yummy. I can't believe your children eat such a good variety. That was another reason I couldn't have gotten away with meatless other than cheese pizza. Love watching you.
I used to hate eggplant till my mum coated it in turmeric, cumin wet mixture thang, then would deep fry it till it was crispy and soft.. So good, only downside is that the turmeric stains everything lol..my pop used to get it all over his face..was hilarious!
Basmati is traditionally had with a lot of Indian food :) I was told years ago that other than wholegrain / brown rice, it’s the second best ‘healthiest’ rice to eat by a nutritionist I was seeing at the time, so I perfected how to cook it & now that’s literally all I eat lol! It’s meant to have a ever so slightly sticky texture, still fluffy, but it’s not as dry as long grain! Give it another try & see how you get on! Another thing with basmati is it loves flavour! Look up some recipes on RUclips, I know you like Pinterest but there are tons & tons of Indian recipes here on RUclips (they’ll all probably tell you to get yourself a traditional spice box; I live in the U.K. & we have a really big multicultural society, especially a big Indian community - I LOVE it! I’ve learnt so much over the years just befriending those from different cultures! And I love all of the shops they open - Asian / Chinese, Indian - amazzzing ingredients & things I’ve never tried before!!) I definitely have recipes but they’re a bit complex in terms of spices. That’s why I invested in a lovely spice box (little tins within a big tin!) - once you have that you can make any curry or Indian dish your heart desires, it makes it so easy too 🥰❤️ xx

One of our favorites is a lentil and sweet potato stew. Sometimes we add the apple chicken sausage and sometimes we don’t so it makes for a great, fast meatless option as well.
I know you asked for Indian dishes- and this is more Middle Eastern in general- but Shakshouka is delicious (and meatless if you choose)!! Binging with Babish also just did a video on this dish and it’s a very “whatever you want it’s your kitchen” kind of meal. I think you’ll love it!
An easy Indian recipe: sautee onions with tomato paste curry powder (if u have onion powder garlic powder cumin coriander clove pepper) andnseasoned chicken. You can add bell peppers diced potatoes crushed tomatoes green peas (whatever you have) and coconut milk. The longer it stews the yummier.

Your Korean lentils need some gochujang! It is spicy and sweet and really amps up all Korean dishes :) I made some black beans with sofrito, cumin, paprika, garlic and onion and put it on top of cilantro lime rice and roasted a sweet potato with cumin and garlic salt! It was delicious! Also, if you are looking for specific Indian recipes, look up things like dal, biryani, Tikka masala. Those are some of my faves and they aren't too spicy either!
Girl you are a riot! Yes I'm trying to lose the quarantine 15! 😱 It ain't working so far!!😜🤪😝!! Try frying the eggplant. I use flour, salt & pepper. Just slice the eggplant into 1/4 th inch slices batter w/ flour mix lightly brown on both sides. If you want you can use the batter you use on yellow squash when you have fried squash also. Love eggplant & yellow squash fried. Yummm-O!!!! Lima beans are green & butter beans are white & I hate them both. My mom use to make them all the time & pintos. Burnt use out, none of us girls will eat them now. But hubby loves pintos & cornbread. So I make those for him. But I'm going to try some of these. I think shrimp would be good in a couple of these. TFS! Stay safe!

Love the video! May I suggest the best way to cook TOFU is to press as much water out as you can, add your fav seasoning blend (mine is creole seasoning) and put a Tb of oil in a pan, and pan fry on all sides until crispy & brown on the outside and soft on the inside! I swear it’s the best way to cook tofu! & I wouldn’t suggest marinating tofu with a liquid marinade (like soy sauce) just because the texture will remain soggy like it’s normal form and that’s what mainly puts people off when it comes to tofu I think. Hope this helps! ❤️❤️

I use the fried recipe from Mings Kitchen here on RUclips! It’s phenomenal. Sometimes I fry spam and shrimp to add to the rice.

Basmati is traditionally had with a lot of Indian food :) I was told years ago that other than wholegrain / brown rice, it’s the second best ‘healthiest’ rice to eat by a nutritionist I was seeing at the time, so I perfected how to cook it & now that’s literally all I eat lol! It’s meant to have a ever so slightly sticky texture, still fluffy, but it’s not as dry as long grain! Give it another try & see how you get on! Another thing with basmati is it loves flavour! Look up some recipes on RUclips, I know you like Pinterest but there are tons & tons of Indian recipes here on RUclips (they’ll all probably tell you to get yourself a traditional spice box; I live in the U.K. & we have a really big multicultural society, especially a big Indian community - I LOVE it! I’ve learnt so much over the years just befriending those from different cultures! And I love all of the shops they open - Asian / Chinese, Indian - amazzzing ingredients & things I’ve never tried before!!)
I definitely have recipes but they’re a bit complex in terms of spices. That’s why I invested in a lovely spice box (little tins within a big tin!) - once you have that you can make any curry or Indian dish your heart desires, it makes it so easy too 🥰❤️ xx

One of our favorites is a lentil and sweet potato stew. Sometimes we add the apple chicken sausage and sometimes we don’t so it makes for a great, fast meatless option as well.
I know you asked for Indian dishes- and this is more Middle Eastern in general- but Shakshouka is delicious (and meatless if you choose)!! Binging with Babish also just did a video on this dish and it’s a very “whatever you want it’s your kitchen” kind of meal. I think you’ll love it!
An easy Indian recipe: sautee onions with tomato paste curry powder (if u have onion powder garlic powder cumin coriander clove pepper) andnseasoned chicken. You can add bell peppers diced potatoes crushed tomatoes green peas (whatever you have) and coconut milk. The longer it stews the yummier.

Your Korean lentils need some gochujang! It is spicy and sweet and really amps up all Korean dishes :)
I made some black beans with sofrito, cumin, paprika, garlic and onion and put it on top of cilantro lime rice and roasted a sweet potato with cumin and garlic salt! It was delicious!
Also, if you are looking for specific Indian recipes, look up things like dal, biryani, Tikka masala. Those are some of my faves and they aren't too spicy either!
And today we are tuna tacos (so so so good) and cucumber salad....I feel like a new woman..so many greens and proteins!!!
Girl you are a riot! Yes I'm trying to lose the quarantine 15! 😱 It ain't working so far!!😜🤪😝!! Try frying the eggplant. I use flour, salt & pepper. Just slice the eggplant into 1/4 th inch slices batter w/ flour mix lightly brown on both sides. If you want you can use the batter you use on yellow squash when you have fried squash also. Love eggplant & yellow squash fried. Yummm-O!!!! Lima beans are green & butter beans are white & I hate them both. My mom use to make them all the time & pintos. Burnt use out, none of us girls will eat them now. But hubby loves pintos & cornbread. So I make those for him. But I'm going to try some of these. I think shrimp would be good in a couple of these. Love the video! May I suggest the best way to cook TOFU is to press as much water out as you can, add your fav seasoning blend (mine is creole seasoning) and put a Tb of oil in a pan, and pan fry on all sides until crispy & brown on the outside and soft on the inside! I swear it’s the best way to cook tofu! & I wouldn’t suggest marinating tofu with a liquid marinade (like soy sauce) just because the texture will remain soggy like it’s normal form and that’s what mainly puts people off when it comes to tofu I think. Hope this helps! ❤️❤️
I just love chicken marinaded in yoghurt and curry paste (tandoori, tikka etc). Make home made parathas with flour and oil too. Yummo!
